I tried making this recipe thinking of my mom’s cooking. It’s surprisingly simple and delicious! This anchovy and kimchi braise is a perfect side dish that will make you want more rice. Let me share a recipe that anyone can easily follow with simple ingredients.

Main Ingredients

  • 100g large dried anchovies (for broth), heads and guts removed
  • 1/4 head of well-fermented aged kimchi
  • A small bunch of green onions
  • Sesame seeds (for garnish)

Seasoning Ingredients

  • 1/2 Tbsp plum extract
  • 1/2 Tbsp sugar
  • 1/2 Tbsp minced garlic
  • 1 Tbsp red pepper flakes
  • 2 Tbsp perilla oil

Cooking Instructions

Step 1

First, carefully remove the heads and the hard innards from the large dried anchovies. It’s important to clean them thoroughly as these parts can cause a bitter taste. We will only use the bodies.

Heat a dry pan over medium-low heat. Add the prepared anchovies and stir-fry for about 3 minutes without any oil. This step removes any fishy odor and enhances their nutty flavor, making the braised dish even more delicious. Make sure not to burn them.

Pour 2 small soju cups (about 200ml) of water into a pot. Add the aged kimchi whole and bring it to a boil. Once boiling, chop the kimchi and add it to the pot. Then, add the red pepper flakes, sugar, minced garlic, and plum extract. Stir well to combine all the seasoning ingredients.

After adding the seasonings, let it simmer for about 5 minutes until the kimchi softens and absorbs the flavors. Finally, drizzle in the perilla oil and sprinkle with chopped green onions and sesame seeds. Simmer on very low heat for another 1-2 minutes to allow the flavors to meld beautifully. Turn off the heat and enjoy this comforting dish!
