Main Ingredients- 4 slices of bread
- 4 fresh eggs
- 120g crisp cabbage
- 20g flavorful butter
- 4 slices of sandwich ham
- 2 Tbsp granulated sugar
- 170g sweet and tangy tomato ketchup
- A pinch of salt for enhanced flavor
- 30g finely chopped green onions (scallions can be substituted)
Cooking Instructions
Step 1
First, prepare the cabbage. Finely shred it. If you find knife skills challenging, using a mandoline slicer will help you cut it uniformly and effortlessly.
Step 2
Soak the shredded cabbage in cold water for about 10 minutes to enhance its crispness, then drain it thoroughly. This step ensures a fresh, salad-like texture.
Step 3
Finely chop the green onions. Using young scallions will add a more delicate texture and aromatic flavor.
Step 4
In a bowl, crack the 4 eggs. Add a pinch of salt and the chopped green onions, then whisk well. It’s best to fully whisk the eggs before adding the salt and green onions to create a smooth, lump-free egg mixture.
Step 5
Heat a frying pan over medium-low heat with some oil. Pour the egg mixture to fit the size of your bread slices and cook until the egg is set. Be careful not to use high heat, as it can burn easily.
Step 6
In another pan, melt the butter. Place the bread slices in the pan and toast them on both sides until golden brown. The butter adds a wonderful savory richness.
Step 7
Continue toasting the bread over medium-low heat until it’s golden and appealingly crisp. This ensures a perfect texture: crispy on the outside and tender on the inside.
Step 8
On one side of the toasted bread, place a slice of ham, followed by the cooked egg. Sprinkle granulated sugar evenly over the top. For extra flavor, you can add cheese. If you prefer less sweetness, feel free to omit the sugar.
Step 9
Now, generously drizzle sweet and tangy tomato ketchup over the ingredients. Top with the drained shredded cabbage.
Step 10
Finally, gently press down on the edges of the bread. This makes it easier to fold the toast in half neatly without it falling apart. Serve it in a paper cup while it’s warm!
