Remember those delicious street toasts sold in front of train stations during college days? Now you can recreate that amazing taste at home! This recipe aims to bring back the famous ‘Changdong Toast’ flavor, ensuring your commute mornings are hearty and satisfying.
Main Ingredients
- 4 slices of bread
- 2 eggs
- About 1/4 head of cabbage
- About 1/4 carrot
- 2-3 Tbsp canned corn kernels (optional)
- 2 slices of cheese

Cooking Instructions
Step 1
First, let’s prepare the vegetables, the star of our toast. Finely shred the cabbage. It might seem like a lot, but it cooks down, so start with about a quarter of the head.

Julienne the carrot thinly. Store the prepared vegetables in an airtight container in the refrigerator; they’re great for other dishes later. Leftovers can be used in salads or with dressing, or even as a base for a quick ‘ketchup-mayo’ sauce.

Crack 2 eggs into a bowl. Whisk them vigorously until they are frothy and well-beaten.

Add a generous amount of the prepared vegetables to the beaten eggs and mix thoroughly. If you’re using canned corn, stir it in now for an added textural element and burst of sweetness. Ensure there are plenty of vegetables to egg mixture to create a thick, substantial patty.

Now, let’s toast the bread. Lightly grease a pan with butter or cooking oil. Toast the bread slices until they are golden brown and slightly crispy on both sides.

In the same pan, or a clean one, add a little more butter or oil. Pour the vegetable and egg mixture into the pan, shaping it into a thick, rectangular patty that matches the size of your bread. It’s crucial to cook this on low heat until the inside is fully cooked through. Carefully flip the patty to cook the other side; be gentle to prevent it from breaking apart.

Once the toast is nicely browned, gently place a slice of cheese on top. The residual heat will help it melt slightly, acting as a delicious binder.
