Remember the most popular side dish in our childhood lunchboxes? It was stir-fried dried shredded pollock! Missing those days, I’ve made this dish with dried shredded pollock and pink sausage for a comforting meal. ^^ This dish brings back old memories and is a perfect side for rice.

Main Ingredients
  • 100g dried shredded pollock (cut into bite-sized pieces)
  • Pink sausage (optional, cut into similar size as pollock)

Cooking Instructions

Step 1

Cut the dried shredded pollock into bite-sized pieces (about 3-4 cm). To enhance the flavor and remove any fishy smell characteristic of dried pollock, lightly stir-fry the shredded pollock in a dry pan over low heat for 1-2 minutes to evaporate some moisture. Once the surface is slightly crisp, remove from heat and let it cool briefly.

Step 2

In a small bowl, combine Gochujang (1/2 Tbsp), soy sauce (1/2 Tbsp), corn syrup (1 Tbsp), and cooking wine (1/2 Tbsp). Mix well to create the sauce. Heat a pan over low heat, pour in the prepared sauce, and as soon as it starts to bubble, turn off the heat immediately. Be careful, as the sauce can burn if cooked for too long.

Step 3

Once the sauce begins to bubble, add the stir-fried dried shredded pollock to the pan. Use a spatula or spoon to quickly toss and coat the pollock evenly with the sauce, ensuring it absorbs the delicious glaze. (If you prepared pink sausage, add it now and toss together.)

Step 4

Finally, add 1 Tbsp of mayonnaise and gently toss again until everything is well combined – this completes the dish! The mayonnaise coats the shredded pollock, giving it a wonderfully smooth texture and even more delicious flavor. Enjoy this with a warm bowl of rice!
