My husband has been asking for soya sausage stir-fry for months. I guess he really wanted it, haha! So, I made this delicious dish for him. It’s a classic comfort food that’s perfect for both a hearty meal and a delightful snack with drinks.

Main Ingredients

  • 1 pack sausages (approx. 200-250g)
  • 1/2 medium carrot
  • 1/2 medium onion

Cooking Instructions

First, prepare the main ingredients for the soya sausage stir-fry: sausages, carrot, and onion. Slice them into bite-sized pieces. For the sausages, slice them diagonally about 1cm thick, or into rounds. Slice the carrot and onion into thin strips, about 0.5cm thick. Feel free to adjust the size according to your preference.

Next, create an aromatic base with scallion oil. Add a little cooking oil to a pan, then add the minced scallions and minced garlic. Stir-fry over low heat until fragrant, allowing the aromas to infuse the oil. Be careful not to burn the garlic; cook until a gentle fragrance rises.

Now it’s time to stir-fry the vegetables. Add the sliced carrots to the pan with the scallion oil and stir-fry over medium heat. Cook for about 2-3 minutes until the carrots are slightly translucent and begin to soften. Cooking the carrots first ensures they maintain a pleasant texture in the final dish.

Once the carrots are partially cooked, add the sliced onion to the pan and stir-fry together. Continue to cook for another 1-2 minutes until the onions become translucent. The onions will release their natural sweetness, enhancing the overall flavor of the stir-fry.

When the vegetables are almost cooked through, add the sliced sausages to the pan. Stir everything together to prevent the sausages from sticking to the pan.

Continue to stir-fry for another 2-3 minutes until the sausages are lightly browned and well combined with the vegetables. The sausages will become more flavorful as they cook. Now, turn off the heat temporarily. Drizzle the ketchup around the edge of the pan. You can adjust the amount of ketchup to your taste.

After adding the ketchup, toss all the ingredients gently to coat them evenly with the sauce. Ensure the vegetables and sausages are well-glazed with ketchup. Finally, turn the heat up to high and quickly stir-fry for about 1-2 minutes, allowing the ketchup to meld perfectly with the ingredients. Your delicious soya sausage stir-fry is ready! Serve it over warm rice or enjoy it with a cold beer.
