Pink sausage fritters bring back so many childhood memories! I decided to make them myself recently. While it wasn’t the exact type of pink sausage I remembered, it was still incredibly satisfying to make and enjoy at home. They’re perfect as a side dish for a warm meal or even as a simple snack with drinks!

  • 180g pink sausage
  • 2 eggs
  • Vegetable oil, for frying

Prepare one pink sausage and two eggs. Wash and thoroughly dry the carrot and green onions, then mince them very finely. Adding these vegetables will enhance the color and texture.

Carefully peel the plastic casing off the pink sausage. Then, slice it into rounds about 5mm thick, keeping the original circular shape. Slicing them too thin might cause them to break apart, so aim for a moderate thickness.

Crack the two eggs into a medium-sized bowl. Add the finely minced carrot and chopped green onions you prepared earlier.

Add about 3 pinches of salt to the egg mixture for seasoning. A small amount of salt is often enough to bring out the flavor.

To reduce any eggy smell and add a subtle flavor, stir in 0.5 Tbsp of cooking wine (like Mirin). If you don’t have cooking wine, you can omit this step, but it helps create a smoother and more delicious egg batter.

Using a spoon, gently whisk the ingredients together until well combined. You might realize you’ve forgotten the pepper at this stage!

Add a pinch of black pepper, grinding it fresh for the best aroma. Adjust the amount according to your preference. Whisk again until the egg batter is smooth and ready.

Gently place the sliced pink sausages into the egg batter. Using a spoon or chopsticks, carefully turn the sausage slices to ensure they are evenly coated with the egg mixture on all sides. Proper coating is key for delicious fritters.

Heat a frying pan over medium heat and add a generous amount of vegetable oil. Ensure the oil is moderately hot; too hot and the fritters will burn quickly. Carefully place the egg-coated sausage slices into the pan, one by one.

Once the edges of the sausage begin to turn a nice golden brown, carefully flip each fritter over in the order they were placed in the pan. Make sure to cook them evenly on both sides.

While chatting with a friend, I noticed the back sides of the fritters had become a bit darker. Thankfully, they weren’t burnt, just nicely browned! The wonderful aroma filled the kitchen.

Gently lift a fritter to check if both sides are golden brown and cooked through. Once satisfied with the color and doneness, turn off the heat and prepare to serve your delicious pink sausage fritters.
