A delightful Japanese-style fried rice omelet, reminiscent of fast food treats from childhood. No need for Worcestershire sauce; ketchup alone is perfectly flavorful! This recipe focuses on a simple, delicious omurice made with just ketchup.

For the Fried Rice

  • 1 bowl cooked rice (warm)
  • A little ham (about 30g)
  • A little sausage (optional)
  • 2-3 cloves garlic
  • 1/4 onion
  • 1/2 green onion stalk
  • 2 Tbsp ketchup
  • 1 Tbsp Worcestershire sauce (optional)
  • 1/2 Tbsp sugar

First, prepare all the ingredients for the fried rice. Finely dice the ham and sausage. Chop the onion and green onion. Mince the garlic by pressing down with the side of your knife – this helps it distribute flavor evenly. Having everything prepped makes the cooking process much smoother.

Heat a frying pan over medium heat and add a generous amount of cooking oil. Once the oil is hot, add the minced garlic and sauté until fragrant. Then, add the chopped onion and cook until it becomes translucent. Next, add the diced ham and sausage and stir-fry until they are lightly browned. Finally, add the chopped green onion and cook for another minute to release its aroma.

Add the warm rice to the pan with the sautéed ingredients. Use a spatula to break up any clumps of rice and stir-fry until the rice is evenly coated and slightly toasted. Once the rice grains are separated and starting to crisp, add the ketchup, Worcestershire sauce (if using), and sugar. Stir-fry over high heat quickly to coat every grain of rice with the sauce. This will give it a glossy finish and enhance the flavor. Be careful not to burn the rice while stir-frying.

Now, let’s make the omelet, the star of the omurice! In a bowl, crack the eggs and whisk them together. You can add a pinch of salt for extra flavor (optional). Lightly grease another frying pan and set it over low heat. Pour the whisked egg mixture in a thin, even layer. Cook just until the edges begin to set but the center is still slightly runny. Carefully slide the cooked egg onto the bed of fried rice. Drizzle with extra ketchup if desired, and your delicious omurice is ready to enjoy!
