A perfect weekend lunch for sons when the husband and daughter are away! Instead of a heavy meal, let’s whip up a delicious retro-style toast using various ingredients we have on hand. It’s a simple yet satisfying dish that’s sure to be a hit with the kids. Enjoy a delightful meal together!
Main Ingredients
- 6 fresh eggs
- 6 slices of bread
- 1/4 carrot, finely julienned
- 1/4 onion, finely chopped
- 1/2 green onion, thinly sliced
- 3 slices of cheese
- 2 leaves of cabbage, thinly shredded
- 1/3 cucumber, thinly sliced
- 1/2 apple, thinly sliced
- A pinch of salt

Cooking Instructions
Step 1
In a large bowl, crack 6 fresh eggs and add a pinch of salt. Whisk the eggs gently until well combined and smooth. Avoid over-whisking, as this can make the cooked egg tough. Aim for a well-blended consistency.

Wash and thinly julienne the carrot, onion, and green onion. For the best texture, ensure the vegetables are cut into fine, even strips. This helps them integrate beautifully into the egg mixture.
Step 3
Add all the julienned vegetables (carrot, onion, green onion) to the whisked eggs. Stir thoroughly with a spoon or spatula to ensure the vegetables are evenly distributed throughout the egg mixture.

Heat a lightly oiled frying pan over medium heat. Pour in about half a ladle of the egg and vegetable mixture. Cook on low heat until the bottom is lightly golden, then carefully flip and cook the other side until set. Be mindful of the heat to prevent burning.

While the egg omelet is cooking, toast the bread slices in a toaster until golden brown. If you don’t have a toaster, you can toast them in a pan (wiped clean after cooking the egg) over low heat, flipping them occasionally. Don’t toast them until they are too hard.

While the eggs and bread are cooking, thinly slice the cucumber and apple, and shred the cabbage. For the cucumber, it’s best to remove the seedy core. Thinly slicing these ingredients ensures they complement the toast without being overwhelming.

Lay out the toasted bread slices. On one side of each slice, spread a thin layer of agave syrup. On the other side, spread your desired amount of cream cheese and strawberry jam. If you don’t have agave syrup or cream cheese, you can skip these. Be cautious not to spread too much jam, as it can make the toast overly sweet.
Step 8
Generously layer the cooked egg omelet onto the jam-spread side of the toast. Top the egg with a good amount of the thinly sliced cucumber, apple, and cabbage. Drizzle with a bit of mayonnaise and a generous amount of ketchup. Finally, place the other slice of bread on top to complete your delicious retro toast! For picky eaters who dislike vegetables, you can opt to only include the egg omelet.
