When packing lunch boxes for the kids’ vacation, this is always among the top 3 most popular dishes! It’s not only delicious but also offers good nutritional balance, so I can make it for my children without feeling guilty. The fun of shaking and mixing the rice makes it even more intriguing for kids.

Ingredients
  • 1 bowl of cooked rice
  • 3 Tbsp stir-fried kimchi
  • 50g ham
  • 3 Tbsp stir-fried anchovies
  • 1 egg
  • Sesame oil
  • Cooking oil

Cooking Instructions

Step 1

First, prepare the delicious stir-fried kimchi. You can find the recipe for this delicious stir-fried kimchi by referring to [here](@7008605).

Step 2

Next, prepare the stir-fried anchovies which will add flavor to your shaken lunch box. For this type of lunch, stir-fried anchovies made crispy with small anchovies are easier to eat. Refer to [this recipe](@7014459) for how to make them.

Step 3

For a single serving, cut 50g of ham into small pieces.

Step 4

Heat a little cooking oil in a pan and stir-fry the cut ham until it’s golden brown and slightly crispy.

Step 5

It’s even better to make a soft-boiled fried egg! The runny yolk mixes wonderfully with the rice.

Step 6

Since today’s dish is rice that you shake and mix, you need to pack it in an airtight container. Neatly arrange the stir-fried kimchi, stir-fried anchovies, and fried ham on one side, and place the 1 bowl of rice in the remaining space.

Step 7

To add a little more savory flavor when mixing, lightly drizzle some sesame oil over the stir-fried kimchi.

Step 8

Then, place the soft-boiled fried egg on top of the rice. Your vacation lunch box menu, the shaken lunch box, or the old-fashioned lunch box is now complete! When you’re ready to eat, close the lid of the airtight container and give it a good shake (shak-shak-shak!) to mix everything thoroughly.
