Main Ingredients

  • 1 Apple (cored and diced)
  • 5 Persimmons (cored and diced)
  • 5 Mandarin Oranges (peeled and segmented)
  • 5 Imitation Crab Sticks (shredded or cut into bite-sized pieces)
  • 1 Cucumber (cored and diced)
  • 3 Bananas (sliced into appropriate size)
  • 1 handful of Peanuts (for a nutty crunch)
  • 1 handful of Raisins (for sweetness and chewiness)

Creamy Dressing

  • 10 Tbsp Mayonnaise
  • 1 container Plain Yogurt (approx. 100g)
  • 1 Tbsp Lemon Juice (for fresh acidity)
  • 4 Tbsp Honey (adjust to taste)

Cooking Instructions

Step 1

First, prepare all the ingredients for the salad. Wash and chop the fruits, vegetables, and imitation crab sticks. Core the apple, persimmons, and cucumber, then dice them into roughly 1.5cm cubes. Peel the mandarin oranges and separate them into segments. Shred or cut the imitation crab sticks into easy-to-eat pieces. We’ll slice the bananas later to prevent browning. Have the peanuts and raisins ready as well.

Place all the main ingredients (except for the bananas and mandarin oranges) into a large mixing bowl. Handle them gently to avoid mashing the fruits and vegetables.

Set the large bowl aside for a moment and prepare a smaller bowl for the dressing. Combine the mayonnaise, plain yogurt, lemon juice, and honey. Whisk with a whisk or fork until smooth and well combined, with no lumps. The lemon juice adds a refreshing tang, and the honey provides a subtle sweetness that balances the flavors. Feel free to adjust the amount of honey to your preference.

Pour the prepared dressing over the ingredients in the first bowl. Do not add the sliced bananas and mandarin orange segments yet. Gently toss the remaining ingredients with the dressing until evenly coated. It’s important to mix gently so the fruits and vegetables don’t break down.

Finally, add the sliced bananas and separated mandarin orange segments as a second addition. These ingredients can become mushy if overmixed, so gently fold them in just once or twice. If you like, add the peanuts and raisins now and give it another light toss. Your nostalgic and delicious fruit salad is complete! It’s wonderful to enjoy immediately, or you can chill it in the refrigerator for an even more refreshing taste.
