Delicious and Savory Macaroni Salad Recipe for the Whole Family

Introducing one of my husband’s most cherished dishes: this hearty and satisfying macaroni salad! Made with simple ingredients, it’s perfect for special occasions or just a comforting everyday meal. Main Ingredients
  • 1 package macaroni (approx. 200-250g)
  • 1 package imitation crab meat (krab sticks or surimi, approx. 100-150g)
  • 1 carrot (medium-sized)
  • 1 can sweet corn (small size, approx. 150g)

Seasoning & Others
  • 200g mayonnaise (approx. 10 Tbsp)
  • 1.5 tsp salt
  • 2 tsp sugar
  • Pinch of black pepper

Cooking Instructions

Step 1

First, thoroughly wash and prepare one medium-sized carrot. Peel it, then dice it into small, bite-sized cubes, about 0.5cm in size. This ensures the carrot is easy to eat and blends well into the salad.

Step 2

Add the diced carrots to boiling water and blanch for just about 1 minute. This quick blanching will keep the carrots slightly crisp while tenderizing them gently.

Step 3

Now it’s time to cook the macaroni. In plenty of boiling water, add the entire package of macaroni (about 200-250g). Cook it for 1-2 minutes longer than the package instructions suggest. I cooked mine for about 15 minutes until it was soft and tender. If you’re serving this to young children or the elderly, consider cooking it a bit softer.

Step 4

Once the macaroni is cooked, immediately drain it in a colander and discard the hot water. Rinse the macaroni thoroughly under cold running water to remove excess starch. Then, place it back in the colander to drain completely. It’s crucial to drain the water well, as excess moisture can make the salad taste watery.

Step 5

Drain the canned sweet corn using a sieve. Tear or chop the imitation crab meat into pieces similar in size to the diced carrots. Have all your prepared ingredients ready.

Step 6

In a large mixing bowl, combine the drained macaroni, blanched carrots, and drained sweet corn. Add the prepared imitation crab meat last. Now it’s time to add the delicious dressing.

Step 7

Add 200g of mayonnaise, 2 teaspoons of sugar, and 1.5 teaspoons of salt to the bowl. The amounts of mayonnaise, sugar, and salt can be adjusted to your personal preference for sweetness and saltiness. For example, if you prefer a sweeter salad, feel free to add a little more sugar.

Step 8

Finally, add a pinch of freshly ground black pepper for extra flavor. Gently mix all the ingredients and dressing together with a spatula or spoon until everything is well combined. You can serve the macaroni salad immediately, or chill it in the refrigerator for a while for an even more refreshing taste!
