Cabbage transforms into a delightful, sweet treat when cooked as a pancake! This recipe features a savory cabbage, carrot, and onion mixture, pan-fried with eggs and nestled between slices of toast. Ingredients- 2 slices of bread
- 1 handful of cabbage (approx. 1 to 1.5 cups)
- 1/4 onion
- 1/4 carrot
- 2 eggs
- Cooking oil, as needed
- 1 Tbsp butter
- 1/2 tsp salt
- 1 Tbsp sugar
- Ketchup, to taste
Cooking Instructions
Step 1
Begin by preparing the star ingredient: the cabbage. Finely shred the cabbage. It’s best to remove the tough core and thick outer leaves, as they can take longer to cook and might be fibrous. Thinly shredded cabbage will cook more evenly and contribute to a pleasant texture.
Step 2
Place the shredded cabbage in cold water and let it soak briefly, then rinse thoroughly. This step helps to remove any slight bitterness and enhances its crispness. After rinsing, make sure to drain the cabbage very well to remove as much excess water as possible.

Next, finely julienne the onion and carrot. Aim for similar sizing to the cabbage shreds. This ensures all the vegetables cook uniformly and integrate well with the egg mixture.

In a bowl, combine the well-drained shredded cabbage with the julienned onion, carrot, and 2 cracked eggs. Add the 1/2 tsp of salt. Mix everything together thoroughly until well combined, resembling a thick batter for a savory pancake.

Heat 1/2 Tbsp of butter in a non-stick pan over medium heat. Place the 2 slices of bread into the melted butter and toast them until they are golden brown and slightly crispy on both sides. The butter adds a wonderful richness.

Now, it’s time to cook the cabbage mixture. Add a generous amount of cooking oil to a rectangular or large flat-bottomed pan and let it heat up over medium heat. Spoon the cabbage batter onto the hot oil and shape it to roughly the size of your toast. You can make it as thick or thin as you prefer.

Pan-fry the cabbage mixture until it’s golden brown and cooked through on both sides. This process will yield approximately two servings of the savory cabbage patty needed for the toast.

Take one slice of the toasted bread and place it on a plate or cutting board. Sprinkle 1 Tbsp of sugar evenly over the surface. The sugar will caramelize slightly as it heats, adding a delightful sweetness.

On the other slice of toast, carefully place the two cooked cabbage patties, stacking them neatly. Drizzle ketchup generously over the cabbage patties according to your preference. The tangy ketchup complements the sweetness of the cabbage.
