It’s not overly fancy, but it’s something I crave from time to time, and eating it always brings a sense of comfort and happiness! This is my recipe for that beloved street toast. The ingredients for this cabbage and egg toast include cabbage, onion, carrot, eggs, sliced ham, and cheese. I’ve made a generous batch for 3-4 servings. Since I had homemade strawberry jam, I used that as a spread, which made it simpler and added a flavor kids love! If you want to replicate the exact taste of old-fashioned toast, you can add sugar, ketchup, and mayonnaise. Feel free to add various toppings like ham, cheese, or bacon for an even more delicious experience! It’s a wonderfully filling snack that can even serve as a meal.

Ingredients (for 3-4 servings)

  • 6 slices of bread
  • 3 slices of butter
  • Plenty of strawberry jam (or ketchup + mayonnaise + sugar, to taste)
  • 3 slices of ham
  • 3 slices of cheese
  • A little cooking oil

Cabbage and Egg Mixture

  • 1/4 small cabbage (about 150g)
  • 1/2 onion
  • 1/4 carrot (about 40g)
  • 4 eggs
  • 1/3 Tbsp salt
  • A pinch of black pepper

Cooking Instructions

Step 1

First, let’s prepare the vegetables for the cabbage and egg mixture. Finely shred the cabbage, onion, and carrot. Aim for thin shreds so they cook evenly and create a pleasant texture.

In a large bowl, combine the shredded vegetables with 4 eggs. Add 1/3 tablespoon of salt and a pinch of black pepper. Mix everything together.

Whisk or stir the mixture until the vegetables and eggs are well combined, forming a batter. Ensure everything is evenly mixed for a consistent texture when cooking.

Melt 3 slices of butter in a frying pan over low heat. Place the bread slices and toast them until golden brown and slightly crispy on both sides. Remove the toasted bread from the pan and set aside.

Clean the pan, then add a little cooking oil. Spoon the cabbage and egg batter into the pan, spreading it out to form a square shape that matches the size of your bread. This will make assembly easier later.
