Ingredients- 2 ripe bananas
- 2 fresh eggs
- 10g unsalted butter (for melting in the pan)
- A pinch of salt
- Generous amount of cinnamon powder
- A few drops of vanilla extract
- Honey or maple syrup (to taste)
Cooking Instructions
Step 1
Prepare the main ingredients for the pancakes: 2 ripe, overripe bananas, 2 fresh eggs, and cinnamon powder to enhance the flavor. Have a whisk or fork ready.
Step 2
Crack the 2 eggs into a bowl. Add a few drops of vanilla extract to eliminate any eggy smell. Gently whisk the eggs until the whites and yolks are well combined. Be careful not to create too much foam.
Step 3
Set aside about half a banana for topping. Peel the remaining 1.5 bananas and place them in the bowl.
Step 4
Mash the bananas thoroughly with a fork or spoon until there are no large lumps. For a smoother texture, you can easily blend them using a mixer or immersion blender.
Step 5
Add cinnamon powder to the mashed bananas according to your preference. If you love cinnamon, feel free to add a generous amount; if you prefer a subtle hint, use less. A pinch of salt will enhance the sweetness of the bananas.
Step 6
Pour the pre-whisked eggs into the mashed banana mixture. The vanilla extract helps to mask the egg odor, further enhancing the pancake’s overall aroma and taste.
Step 7
Now, prepare the pan. Heat it over low heat. Divide the 10g of unsalted butter into about 6-7 portions and melt them one by one in the pan as you cook the pancakes. Maintaining low heat is crucial to prevent the butter from burning.
Step 8
Once the butter has melted in the pan, scoop the banana batter using a ladle and spread it thinly on the pan. Spreading it thinly is recommended, as thick pancakes can be difficult to cook through. Cook over low heat until golden brown on both sides. When you see bubbles starting to form on the surface, it’s time to flip.
Step 9
Stack the cooked banana pancakes one by one on a plate. They taste best when served warm right off the pan.
Step 10
Lightly sprinkle cinnamon powder over the pancakes for visual appeal and an added aroma. You can also add a light dusting of powdered sugar if desired.
Step 11
Slice the reserved banana thinly and arrange them attractively on top of the pancakes. The fresh banana’s texture complements the pancakes wonderfully.
Step 12
Finally, drizzle with honey or maple syrup to your liking for an extra touch of sweetness. Your delicious no-flour banana pancakes are ready! Enjoy them with warm coffee or milk.
