  • 1 pack Natto (approx. 60g)
  • 1 medium Tomato (approx. 120-140g)
  • 1 pack Silken Tofu (approx. 150-200g)
  • 4 cups Dashi Broth (Katsuobushi-based, approx. 800g)
  • 3 Tbsp Japanese Miso Paste
  • Chopped Scallions, for garnish

Cooking Instructions

Step 1

Start by preparing a flavorful dashi broth. In a pot, combine 4 cups of water and one 10x5cm piece of kombu (kelp). Bring to a boil over medium-high heat and simmer for 10 minutes. Remove the kombu, then add a handful (about 12g) of katsuobushi (bonito flakes). Let it simmer for another 1-2 minutes until the flakes sink to the bottom. Strain the broth through a fine-mesh sieve to get a clear dashi. Set aside.

Prepare the vegetables and tofu. Wash the tomato, remove the stem, and dice it into roughly 1cm cubes. Gently cut the silken tofu into similar-sized cubes, being careful not to break it apart too much.

Pour the prepared dashi broth into a clean pot and bring it to a gentle simmer over medium heat. Once simmering, add the 3 tablespoons of Japanese miso paste. Stir well until the miso is fully dissolved, ensuring there are no lumps for a smooth soup base.

When the miso broth returns to a simmer, add the diced tomatoes and silken tofu. Let the soup simmer gently for a short while until the tomatoes are tender but not mushy. This brief cooking time preserves the fresh taste and texture of the ingredients.
