Pasta Ingredients

  • 1 serving pasta (approx. 100g)
  • 7 Vienna sausages (or your favorite sausages)
  • 1/2 medium onion

Sauce

  • 1/2 Tbsp sugar
  • 3 Tbsp ketchup
  • 1/2 Tbsp oyster sauce

Cooking Instructions

Step 1

First, thinly slice the onion. Cut the Vienna sausages into four pieces each. Prepping your ingredients like this makes the cooking process much smoother and quicker.

Step 2

Now, let’s make the sauce that defines the Napolitan flavor! In a small bowl, combine 1/2 Tbsp sugar, 3 Tbsp ketchup, and 1/2 Tbsp oyster sauce. Mix well until smooth. At the same time, bring a large pot of water to a boil. Add a pinch of salt (optional) and cook the pasta for about 15 minutes, or according to package directions, until al dente.

Step 3

While the pasta is cooking, heat 1-2 Tbsp of cooking oil in a pan over medium heat. Add the sliced onions and sauté until they become translucent and release a sweet aroma. This step is key to bringing out the natural sweetness of the onions.

Step 4

Once the onions are nicely softened, add the Vienna sausages to the pan. Continue to stir-fry until the sausages are browned and cooked through. The rendered fat from the sausages will add wonderful flavor.

Step 5

Drain the cooked pasta and add it directly to the pan with the onions and sausages. Add about half a ladle of the pasta cooking water. This starchy water helps the sauce coat the pasta beautifully and keeps it moist. Toss the pasta to coat it lightly with oil and mix with the other ingredients.

Step 6

Finally, pour the prepared sauce over the pasta and stir-fry everything together for about 30 seconds. You want the sauce to coat the pasta evenly. And just like that, your quick and delicious Napolitan pasta is ready to serve! Enjoy it immediately while it’s hot.
