We made this warm, nourishing soup for the kids, inspired by the health benefits of radish, especially during cold season. It’s perfect for a comforting meal when you need a boost!

Main Ingredients

  • 1 head baby napa cabbage
  • 1/6 Korean radish (approx. 150g)

Broth & Seasoning

  • 700ml water (approx. 3.5 cups)
  • 1 anchovy-kelp stock pack
  • 1 Tbsp soybean paste (Doenjang)
  • 1 Tbsp tuna extract or soy sauce for soup
  • 1 Tbsp minced garlic

Cooking Instructions

Step 1

Wash the baby napa cabbage thoroughly and cut it into bite-sized pieces, about 4-5cm long. Peel the radish and slice it thinly into rectangles (namak-sseongseong) or julienne it. For a bit more texture, you can slice it slightly thicker.

In a pot, add 700ml of water, the stock pack, and the sliced radish. Bring to a boil over high heat. Once boiling, remove the stock pack. Dissolve the soybean paste by either using a sieve over the pot or by carefully mashing it with a ladle into the broth. Reduce heat to medium-low and simmer for 5-7 minutes, or until the radish becomes translucent. Pre-dissolving the doenjang ensures a smooth, lump-free soup.

Once the radish is somewhat tender, add the prepared napa cabbage to the pot. Continue to simmer for another 3-5 minutes, or until the cabbage is softened. As the cabbage wilts, it will release its natural sweetness, making the broth even more refreshing and delicious.

To enhance the depth of flavor, stir in 1 Tbsp of tuna extract (or soup soy sauce) and 1 Tbsp of minced garlic. Let it simmer for a moment longer. If you prefer a little heat, you can add a small amount of chopped green or red chili peppers at this stage for a spicy kick.
