This Spinach Miso Soup is my absolute favorite! It’s as easy to make as instant ramen, but the taste is simply the best. Today, I’ll guide you through how to make this delightful soup with ease and detail. Let’s get started!

Ingredients

  • 1 bunch fresh spinach (approx. 300g)
  • 1 stalk green onion (white part mainly)
  • 3 Tbsp Miso paste (adjust to taste if using homemade miso)
  • 1 pack Dashi soup stock or 15 dried anchovies for broth
  • 1 Tbsp soy sauce for soup (or salt, for seasoning)
  • 1/2 onion
  • 1 handful dried shrimp (optional, for extra umami!)
  • 1 dried shiitake mushroom (optional)

Cooking Instructions

First, prepare the spinach. Clean the roots thoroughly and wash the spinach multiple times under running water. Bring a pot of water to a boil with a pinch of salt. Blanch the spinach for about 30-40 seconds; be careful not to overcook it, as it will become mushy. Immediately rinse the blanched spinach in cold water, squeeze out any excess moisture, and cut it into bite-sized pieces (about 3-4 cm).

Next, prepare the other vegetables. Slice the green onion diagonally, focusing on the white part. Thinly slice the onion. If using dried shiitake mushrooms, rehydrate them in lukewarm water, remove the stems, and slice them thinly. (You can omit the shiitake mushrooms if you don’t have them.)

Now, let’s make a flavorful broth. Pour 3 liters of water into a pot and add about 15 dried anchovies (or a dashi pack). Bring to a boil over high heat. Once boiling, reduce the heat to medium and simmer for about 5 minutes to extract the rich flavor from the anchovies and kelp.

Remove the anchovies (or dashi pack) from the broth. In a separate bowl or using a sieve, dissolve 3 tablespoons of miso paste into the broth. To ensure the miso dissolves smoothly, you can scoop out a ladleful of broth, mix it with the miso until smooth, and then pour it back into the pot.

Once the broth with the dissolved miso comes to a boil, add the blanched spinach. Then, add the sliced onion and shiitake mushrooms. Gently stir to combine the ingredients.

Finally, add the dried shrimp and green onions. (Feel free to omit the dried shrimp if you prefer.) If you like a clean and light flavor, skip the chili powder. For a spicy and savory broth, add 1-2 tablespoons of chili powder according to your preference.
