Mussel and Radish Rice with Chewy Texture and Sweet Flavors
Delicious and Healthy Mussel and Radish Rice Made with ‘Cham Dream’ Premium Rice
Tired of the usual soybean sprout rice? Introducing a simple yet flavorful recipe for ‘Cham Dream’ Mussel and Radish Rice, enhanced with fresh mussels, sweet radish, and crisp zucchini. It’s a comforting rice dish that will have you finishing your bowl in no time!
For Cooking the Rice- Soaked rice (recommend using ‘Cham Dream’ premium rice) – 1 cup
- Fresh mussels – 70g
- Radish – 100g (about 1/4 cup)
- Zucchini – 1/4 small
- Scallion – 1/8 section (finely chopped)
- Soy sauce (for marinating mussels) – 1 Tbsp
- Mirin (for marinating mussels) – 1 Tbsp
For the Flavorful Seasoning Sauce- Soy sauce – 1 Tbsp
- Sesame oil – 5g (1 tsp)
- Sugar – 1 tsp
- Sesame seeds or crushed sesame seeds – 1/2 tsp
- Ground black pepper – a pinch
- Chopped red chili pepper (for garnish, optional)
- Ginger juice (to taste)
- Chopped green chili pepper (for garnish, optional)
- Soy sauce – 1 Tbsp
- Sesame oil – 5g (1 tsp)
- Sugar – 1 tsp
- Sesame seeds or crushed sesame seeds – 1/2 tsp
- Ground black pepper – a pinch
- Chopped red chili pepper (for garnish, optional)
- Ginger juice (to taste)
- Chopped green chili pepper (for garnish, optional)
Cooking Instructions
Step 1
First, prepare all the ingredients needed to make delicious mussel and radish rice. Soak the rice for about 30 minutes, then drain it in a sieve.
Step 2
Wash the radish, peel it, and then cut it into julienne strips, similar in size to rice grains or slightly thicker. Julienne the zucchini similarly.
Step 3
In a pot, bring plenty of water to a boil. Add the mussels and blanch them for about 1-2 minutes until they open. Immediately remove them, discard the shells, and clean them thoroughly. Marinate the cleaned mussels with the seasoning ingredients (1 Tbsp soy sauce, 1 Tbsp mirin) by gently mixing.
Step 4
Heat a pan with a little sesame oil over medium heat. Add the julienned radish and stir-fry until it becomes translucent and slightly tender. You can add a tiny pinch of salt for seasoning at this stage (optional).
Step 5
Add a bit more sesame oil to the same pan and stir-fry the julienned zucchini just until it softens slightly. Be careful not to overcook the zucchini, as it can become mushy. You can also add a pinch of salt here (optional).
Step 6
In a rice cooker, add the soaked rice. Arrange the stir-fried radish, zucchini, and marinated mussels evenly on top. Add water, slightly less than the usual amount for cooking rice, just enough to cover the rice grains. Press the cook button to steam the rice. (Use the standard white rice cooking mode).
Step 7
Once the rice is cooked, let it steam for about 5 minutes. Then, gently fluff the rice with a rice paddle, being careful not to mash the grains, ensuring all ingredients are evenly distributed.
Step 8
Transfer the finished mussel and radish rice to a serving bowl. For an extra flavor boost, you can mix the seasoning sauce ingredients (soy sauce, sesame oil, sugar, sesame seeds, pepper, ginger juice, chopped red and green chili peppers) and serve it on the side.
