Main Ingredients

  • King Oyster Mushrooms (Santae variety) 100g
  • Carrot 1/2
  • Onion 1
  • Green Bell Pepper 1/2

Cooking Instructions

Step 1

We’re going to prepare one pack of King Oyster Mushrooms (also known as the Santae variety) to generously add to our Japchae. These mushrooms are known for their wonderfully chewy texture.

Step 1

Step 2

This particular type of mushroom boasts a texture and flavor remarkably similar to meat. That’s why you can achieve a deep, satisfying taste using just the mushrooms, without needing to add any actual meat. Let’s make a hearty Japchae packed with these mushrooms.

Step 2

Step 3

These King Oyster Mushrooms, with their meat-like chewiness, are a versatile ingredient perfect for stir-fries, salads, or even pancakes. Today, we’ll fully appreciate their taste in Japchae.

Step 3

Step 4

Since the star of today’s Japchae is the King Oyster Mushroom, we’ll skip the meat and flavor it solely with vegetables. Thinly slice the carrot, green bell pepper, and onion into julienne strips. Also, prepare a small amount of chives.

Step 4

Step 5

First, place the prepared carrots, green bell peppers, and onions into a pan with a little oil and stir-fry them evenly. It’s best to cook them just enough to bring out their natural sweetness and aroma.

Step 5

Step 6

Now, add the King Oyster Mushrooms, our key ingredient, which have been washed and patted dry, to the pan with the other vegetables. Stir-fry them together. The mushrooms will release their moisture and cook until tender and delightfully chewy. This chewy texture is the highlight! (No need to boil the mushrooms; they can be stir-fried directly.)

Step 6

Step 7

Once the vegetables and mushrooms are sufficiently stir-fried, add the chopped chives and stir-fry briefly until they are just wilted. The fresh aroma of chives will enhance the overall flavor.

Step 7

Step 8

In a separate pot, boil the glass noodles until cooked. Drain them, then mix them with a soy sauce-based seasoning (soy sauce, sugar, sesame oil, etc.) and a sprinkle of sesame seeds. Pre-seasoning the noodles like this ensures they absorb the flavors beautifully.

Step 8

Step 9

Combine the seasoned glass noodles with the stir-fried vegetables and mushrooms. Gently toss everything together to mix well. Be careful not to break the noodles or let them clump together.

Step 9

Step 10

Worried if you can make delicious Japchae with just mushrooms instead of meat? Don’t be! With these meat-like King Oyster Mushrooms (Santae variety), you can achieve a rich and deep flavor that rivals traditional meat Japchae.

Step 10

Step 11

Transfer the finished Mushroom Lover’s Japchae to a beautiful serving plate. Its appetizing appearance will surely stimulate your appetite.

Step 11

Step 12

For your next holiday gathering or special meal when you crave a Japchae that’s savory, clean-tasting, and not at all greasy, try making this mushroom Japchae. It’s a dish the whole family will enjoy.

Step 12

Step 13

Even without any meat, this Japchae is a triumph! Thanks to the abundant flavor and chewy texture of the mushrooms, it’s a dish that stands proudly alongside traditional meat Japchae. Enjoy your meal!
