Main Ingredients
- 300g King Oyster Mushrooms (or similar), trim ends
- 2 Shiitake Mushrooms, sliced
- 7 Fresh Shiitake Mushrooms, sliced or cut decoratively
- 3 leaves Napa Cabbage, cut into 2-3 sections lengthwise, then thinly sliced on the bias
- 2 heads Baby Bok Choy, trimmed and leaves separated
- 1/3 Small Zucchini, thinly sliced into half-moons
- Assorted Beef (e.g., sirloin or thinly sliced for shabu-shabu), to taste
Seasoning for Hot Pot
- 1.5 Tbsp Soy Sauce
- 1/3 Tbsp Minced Garlic
- 1 Tbsp Cooking Wine (e.g., Mirin or Sake)
- 1.5 Tbsp Fish Sauce
- 1/2 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Plum Extract (Maesil Extract)
- 1/2 Tbsp Minced Garlic (total 2/3 Tbsp)
- 1.5 Tbsp Soy Sauce
- 1/3 Tbsp Minced Garlic
- 1 Tbsp Cooking Wine (e.g., Mirin or Sake)
- 1.5 Tbsp Fish Sauce
- 1/2 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Plum Extract (Maesil Extract)
- 1/2 Tbsp Minced Garlic (total 2/3 Tbsp)
Cooking Instructions
Step 1
Arrange the prepared Napa cabbage leaves at the bottom of a wide, shallow pot or hot pot. Cut them lengthwise into 2-3 pieces and slice thinly on the bias. The cabbage will release its natural sweetness into the broth, enhancing the overall flavor.
Step 2
Add the thinly sliced zucchini, cut into decorative half-moons, to the pot. Slice the King Oyster Mushrooms in half lengthwise, then thinly slice them. Arrange the fresh Shiitake mushrooms, either sliced thinly or cut into decorative shapes. Trim the tough ends of the enoki mushrooms and separate them before placing them in the pot.
Step 3
Prepare the beef by slicing it into bite-sized pieces. In a small bowl, gently marinate the beef with 1 Tbsp soy sauce, 1/3 Tbsp minced garlic, and a pinch of pepper (optional). Place the marinated beef in the center of the pot, nestled amongst the vegetables and mushrooms. Pour in your preferred hot pot broth (such as anchovy-kelp broth or store-bought broth) to cover the ingredients. Mix all the seasoning ingredients together to create the seasoning paste and add it to the hot pot. Bring the pot to a boil, then reduce the heat to low and simmer gently until all ingredients are tender and cooked through. Your delicious Mushroom Hot Pot is now ready to be enjoyed!
