Main Ingredients
  • Ciabatta bread, 2 loaves
  • Button mushrooms, 2
  • Enoki mushrooms, 1/3 package
  • Cheddar cheese, 1 slice
  • Bacon, 2 strips
  • Shredded mozzarella or pizza cheese, 60g

Tangy & Creamy Sauce Ingredients
  • Cream cheese, 2 Tbsp
  • Mayonnaise, 1 Tbsp
  • Plain yogurt, 2 Tbsp (for a lighter, less rich taste!)
  • Lemon juice, 1 tsp
  • Minced garlic, 1 Tbsp
  • Black pepper, a pinch

Cooking Instructions

Step 1

Begin by thinly slicing the button mushrooms and cutting the bacon into bite-sized pieces. Trim the base of the enoki mushrooms and gently separate them. Preparing the ingredients in this way will make the cooking process much smoother.

Step 2

Place all the prepared ingredients—sliced button mushrooms, separated enoki mushrooms, and chopped bacon—into a medium-sized bowl. Add 1 tablespoon of minced garlic to enhance the flavor.

Step 3

Now, add 60g of shredded mozzarella or pizza cheese to the bowl with the other ingredients. Mix everything gently to combine.

Step 4

Let’s make the delicious sauce! In a separate small bowl, combine 2 tablespoons of softened cream cheese, 1 tablespoon of mayonnaise, 2 tablespoons of plain yogurt (this adds a refreshing tang and balances the richness), 1 teaspoon of lemon juice, and a pinch of black pepper. Whisk everything together until smooth and well-combined. The plain yogurt is key to preventing the filling from becoming too heavy.

Step 5

Take the ciabatta loaves and carefully cut a deep slit down the middle of the top surface, creating a pocket for the filling. Be cautious not to cut all the way through. Gently hollow out a portion of the bread’s interior to make space for the mushroom and cheese mixture. Ensure you don’t tear the bread.

Step 6

Generously fill the hollowed-out ciabatta with the prepared mushroom, bacon, and cheese mixture. Pack it in well so every bite is full of deliciousness!

Step 7

Top the filled ciabatta with an even layer of shredded mozzarella or pizza cheese. For extra flavor and visual appeal, tear the slice of cheddar cheese into small pieces and scatter them over the top along with the mozzarella.

Step 8

Preheat your oven to 200°C (400°F). Place the prepared mushroom cheese bread on a baking sheet and bake for approximately 10 minutes, or until the cheese is melted, bubbly, and golden brown. Cooking times may vary slightly depending on your oven.

Step 9

Once golden brown and irresistible, remove the mushroom cheese bread from the oven. Serve immediately and enjoy this delightful and satisfying brunch or snack!
