What’s the line between a light, clear Doenjang Guk (soybean paste soup) and a thicker, richer Doenjang Jjigae (soybean paste stew)? It’s always a bit blurry! From a cook’s perspective, I often prefer a more substantial soup, so today I’m sharing a simple yet flavorful Mushroom and Zucchini Doenjang Guk. This recipe uses rice water for a mild, savory broth, combined with fresh zucchini, aromatic mushrooms, and soft tofu for a comforting taste that everyone will love. It’s perfect for a hearty meal, especially when served bubbling in a stone pot. You can even enjoy it by pouring a generous spoonful over rice and mixing it with a fried egg – it’s that delicious!
Ingredients- 2 Tbsp Doenjang (Korean soybean paste)
- 1/2 block Tofu
- 1/3 Zucchini
- 2 Shiitake mushrooms
- 1 Red chili pepper
- 1/2 Green onion
- 1 Potato
- 1 L Rice water (water used for rinsing rice)
- 500 ml Purified water
- 1 Tbsp Minced garlic
Cooking Instructions
Step 1
First, we’ll create a flavorful broth to form the base of our Doenjang Guk. Place about 10 dried anchovies or dried pollack in a pot. For an even deeper umami flavor, you can lightly toast the anchovies before adding them.

Add 1 liter of rice water, which is essential for the soup’s mild savoriness. Bring this to a boil over high heat for 5 to 10 minutes, uncovered, to let the flavors infuse.

While the broth is simmering, let’s prepare the ingredients for the soup. Zucchini, potatoes, mushrooms (like shiitake; you can also add oyster or king oyster mushrooms), and chili peppers for a touch of spice are great additions. Tofu is a must-have to make the soup richer and more satisfying.

Chop all the prepared ingredients into bite-sized pieces. Try to cut the potatoes and zucchini to a similar size so they cook evenly. Slice the mushrooms, finely chop the chili peppers and green onions. Dice the tofu.

After simmering for 5-10 minutes, your savory broth is ready. Reduce the heat slightly.

It’s time to strain the broth. You can either place a sieve over a bowl and pour the broth through it to remove the anchovies, or if you prefer a very clear broth, strain it meticulously.

Now, let’s assemble the soup! Start by adding the firmer vegetables first. Add the potato to the pot. Potatoes take longer to cook, so they go in first.

Next, add the onion (if using). Onions not only add sweetness to the broth but also enhance its refreshing taste. Add them along with the potatoes.

Add the aromatic shiitake mushrooms. If you’re using other types of mushrooms, add them at this stage as well.
