This is a special pancake recipe featuring a delicious filling of chewy mung beans, fragrant chives, and juicy ground beef, creating a flavor reminiscent of mandu (Korean dumplings). We build a rich flavor base with simple seasonings like garlic, soy sauce, salt, and sesame oil, ensuring every bite is bursting with savory goodness. Perfect as a snack with makgeolli (Korean rice wine) or as a hearty meal, this pancake is truly irresistible!

Pancake Filling Ingredients

  • 50g ground beef
  • 50g ground pork
  • 200g mung beans
  • 70g chives
  • 10g carrot
  • 1g chili threads (for garnish)

Pancake Batter and Seasoning

  • 100g pancake mix (approx. 9 tablespoons)
  • 200ml water
  • 1 ice cube (for extra crispiness)
  • 7.5ml soy sauce (1.5 tsp)
  • 1.25ml salt (0.25 tsp)
  • 2.5ml sugar (0.5 tsp)
  • 5ml oyster sauce (1 tsp)
  • 15ml minced garlic (1 tbsp)
  • 15ml sesame oil (1 tbsp)
  • 3 dashes black pepper

Sweet and Savory Dipping Sauce

  • 30ml soy sauce (2 tbsp)
  • 30ml vinegar (2 tbsp)
  • 2.5ml sesame oil (0.5 tsp)
  • 2.5ml sugar (0.5 tsp)
  • Cooking oil (for frying), enough

Cooking Instructions

Step 1

First, wash the chives thoroughly, pat them dry, and chop them into about 2cm lengths. Rinse the mung beans, place them in a microwave-safe bowl, cover with plastic wrap, and microwave for 4 minutes at 500W. Immediately after microwaving, rinse the mung beans under cold water to cool them down. Squeeze out excess water firmly with your hands, then chop them into roughly three portions. Prepare the ground meat by mixing 50g each of beef and pork for a total of 100g.

In a bowl, combine 100g of pancake mix (about 9 tablespoons) with 200ml of water. Add 1 ice cube to help achieve an extra crispy texture. Stir in 7.5ml soy sauce, 1.25ml salt, 2.5ml sugar, 5ml oyster sauce, 15ml minced garlic, 15ml sesame oil, and 3 dashes of black pepper. Mix well until there are no lumps to create the pancake batter.

Add the prepared mung beans, chives, and mixed ground meat to the batter. Mix everything together thoroughly. Set aside the chili threads and chopped carrots for garnishing.

Now it’s time to cook the pancake. Preheat a frying pan over medium-low heat and add a generous amount of cooking oil. Ladle the batter into the pan to form a round shape and adjust the heat to medium. Cook the first side for about 1 minute and 30 seconds, or until the edges look golden brown. Flip the pancake and cook the other side for about 1 minute. Flip it back to the first side, sprinkle the chili threads attractively over the top, immediately flip it to the second side, and then flip it back to the first side again to complete the cooking. Your delicious mung bean pancake is ready!

If you’re making this pancake for children, you can use the chopped carrots as a garnish for a more appealing look. Place the carrots on top of the batter when you first put it in the pan. Pay close attention to the heat: start with medium-low, increase to medium while cooking, and then adjust back to medium-low as needed to ensure it cooks through and becomes crispy without burning.

Prepare the dipping sauce to accompany your pancake. Simply mix 30ml soy sauce, 30ml vinegar, 2.5ml sesame oil, and 2.5ml sugar. Feel free to add chili powder or sesame seeds according to your preference for extra flavor. It’s also delicious when dipped in ponzu sauce!
