King Oyster Mushrooms pan-fried with sesame oil and soy sauce: An easy and delicious dish

King oyster mushrooms are a staple I always pick up at the market! They’re incredibly versatile and one of my favorite mushrooms to cook with. Today, we’ll be pan-frying them in fragrant sesame oil and flavoring them with a savory soy sauce glaze. This recipe is perfect for a quick side dish or even a delightful appetizer.

  • 2 Tbsp Sesame Oil
  • 1 Pinch Salt

Cooking Instructions

Step 1

Gently rinse the fresh king oyster mushrooms under running water and thoroughly pat them dry with a clean kitchen towel. Trim off the very bottom end of each mushroom. Then, slice them lengthwise into 4 to 5 pieces. If a mushroom is particularly thick, aim for 5 slices; if it’s thinner, 4 slices will work well. This ensures even cooking.

Step 2

Heat a grill pan or a regular frying pan over medium heat. Add 2 tablespoons of fragrant sesame oil. Once the oil is shimmering, arrange the prepared king oyster mushroom slices in a single layer. Using a grill pan will create attractive grill marks, adding visual appeal. Lightly sprinkle 1 pinch of salt over the mushrooms as they cook to enhance their flavor. Pan-fry for about 5-7 minutes, flipping occasionally, until both sides are golden brown and slightly tender.

Step 3

Finely mince the garlic cloves. It’s nice to have a little texture, so avoid making it a complete paste. Deseed the Korean green peppers (or other mild chili peppers) and chop them into pieces roughly the same size as the minced garlic. In a small bowl, combine the soy sauce (1.5 Tbsp), water (1 Tbsp), cooking wine (1 Tbsp), and oligosaccharide (0.5 Tbsp). Whisk everything together until well combined to create the soy sauce glaze.

Step 4

Wipe out the pan if necessary, or use a clean pan. Pour the prepared soy sauce glaze into the pan and bring it to a gentle simmer over low heat. Allowing the glaze to simmer briefly will mellow its flavor and deepen its taste.

Step 5

Add the pan-fried king oyster mushrooms back into the pan with the simmering glaze. Spoon the glaze over the mushrooms, allowing them to absorb the flavors. Let them cook gently for another minute or so to allow the sauce to coat the mushrooms beautifully. Drizzle a few extra drops of sesame oil right at the end, just before turning off the heat, for an extra burst of nutty aroma. Serve immediately with warm rice or as a delightful side dish.
