Main Ingredients

  • 1/2 head of well-fermented kimchi
  • 1 can of tuna

Seasonings & Broth

  • 1 Tbsp Dashida (MSG-based seasoning)
  • 2 Tbsp cooking oil
  • 1 Tbsp fine gochugaru (Korean chili powder)
  • 1 Liter water
  • 5 Tbsp kimchi juice
  • 1 Tbsp sesame oil

Cooking Instructions

Step 1

First, cut the kimchi into bite-sized pieces. In a pot, combine the chopped kimchi, 5 Tbsp kimchi juice, 1 Tbsp Dashida, 2 Tbsp cooking oil, and 1 Tbsp gochugaru. Do NOT turn on the heat yet. Gently mix and massage the ingredients into the kimchi to help them meld together.

Open the can of tuna. Add the entire can, including the oil, into the pot. The tuna oil will add a wonderful depth of flavor to the stew. Remember, the heat is still off at this stage.

Pour in 500ml (half of the total 1 liter) of water into the pot. Now, turn the heat to medium. Cover the pot and let it come to a rolling boil, allowing the ingredients to meld together.

Let it simmer for about 10 minutes. The kimchi should become tender, and the broth will start to thicken and become rich. Now, add the remaining 500ml of water and bring it to another boil. Adding the water in two stages is key to achieving that deep, savory flavor. Aim for a total cooking time of around 20 minutes.

Finally, drizzle in 1 Tbsp of sesame oil. Your delicious kimchi stew is ready! Enjoy it piping hot with a bowl of steamed rice. 🙂
