Featuring my mother’s special touch, this chicken steak is marinated with onion to naturally tenderize the meat, creating a rich, savory flavor. Main Ingredients

  • 1 whole chicken, cut into 6 pieces
  • 1 medium onion
  • 1/3 head broccoli
  • 6 cherry tomatoes
  • 1/2 cup macaroni
  • 5 cloves garlic

Seasoning & Others

  • 1 Tbsp minced garlic
  • Salt, to taste
  • Black pepper, to taste
  • Cooking oil, for pan-frying

Cooking Instructions

Step 1

Prepare the whole chicken by separating it into 6 pieces: two drumsticks, two thighs, two breast halves. Rinse them thoroughly under cold water, then pat them completely dry with paper towels. Trim away any excess fat. For the thicker parts like the drumsticks, gently pound them to flatten slightly. For the breast meat, make a few shallow cuts horizontally to help it cook more evenly and tenderly.

Making these cuts is essential for allowing the marinade to penetrate deeply and ensuring that even the thickest parts of the chicken cook through thoroughly. Treat thicker cuts like you would a steak, and ensure the cuts are well-placed.

Peel and rinse the onion. Grate it finely using a box grater or blend it into a puree using a blender. The natural sweetness and juices from the onion will work wonders in tenderizing the chicken.

To the grated onion, add 1 tablespoon of minced garlic and mix well to create the marinade base.

Arrange the prepared chicken pieces on a large plate or tray, skin-side down. Season generously with salt and freshly ground black pepper. Then, generously slather the onion-garlic mixture all over the chicken pieces. Make sure the marinade covers both the skin and the flesh for maximum flavor infusion.

Layer the chicken pieces on top of each other in a container or bowl, pouring any remaining marinade over them. Cover tightly with plastic wrap and refrigerate for at least 1 hour to marinate. For even more incredible flavor and tenderness, allow it to marinate for 2-3 hours or even overnight. The longer it marinates, the more delicious it becomes!

While the chicken is marinating, prepare your side vegetables. Cut the broccoli into bite-sized florets. You can use whole garlic cloves or slice them thinly. Remove the stems from the cherry tomatoes and wash them. These vegetables will be roasted alongside the chicken, adding color and balancing the richness of the steak.

Cook the macaroni in boiling water with 1 teaspoon of salt for about 10 minutes, or until al dente. Drain the macaroni well. In a lightly oiled pan, sauté the cooked macaroni with a pinch of salt and pepper until lightly browned and slightly crispy. This makes a wonderful accompaniment to the chicken steak.

Heat a generous amount of cooking oil in a skillet over medium heat. Remove the marinated chicken from the refrigerator and place it in the hot skillet, skin-side down first. Cook until the skin is golden brown and crispy. Once the skin is nicely browned, carefully flip the chicken pieces to cook the other side. Searing the skin side first helps to render the fat and keep the meat juicy inside.

Once the chicken is partially cooked, add the broccoli florets, garlic cloves, and cherry tomatoes to the skillet. Cook the vegetables alongside the chicken. Since vegetables cook faster, remove them from the pan once tender-crisp and set aside. Cover the skillet with a lid and continue cooking the chicken over medium heat until it’s cooked through. Once the chicken is cooked internally, remove the lid and continue to cook uncovered over medium-low heat until the skin is beautifully golden and crisp. Your delicious chicken steak is now ready to be served!
