On a day when it’s just me and my eldest son, I suggested Kimchi Hand-Pulled Noodles for lunch, and he happily agreed! My daughter dislikes hand-pulled noodles in general, and my younger son doesn’t like them with kimchi, so this is a special treat we can only enjoy when they’re both out. That’s why I quickly made this delicious Kimchi Hand-Pulled Noodles when it was just the two of us. Once the water boils, add the kimchi and drop in the dough with a spoon. It cooks up in about the time it takes to make ramen, making it super simple and easy. Plus, the broth is wonderfully refreshing and clean, with an amazing taste that starts from the very first sip. My eldest son said it was ‘exactly his style’ and ate it up! I also thoroughly enjoyed the hearty, spicy flavor that warmed me up from the inside out.   • 2 cups well-fermented kimchi (chives kimchi recommended)

Making the Chewy Noodle Dough: In a large bowl, combine 3 cups of flour. Gradually add water while kneading with your hands until a smooth, elastic dough forms. Once the dough is well-kneaded and smooth, cover it with plastic wrap or a damp cloth and let it rest at room temperature for about 30 minutes. This resting period will make the noodles even chewier.

Creating the Refreshing Broth: Pour 5-6 cups (about 1-1.2 liters) of water into a pot and bring to a boil over high heat. Once the water is boiling, add 2 cups of chopped, well-fermented kimchi and let it simmer for about 5 minutes to allow the refreshing kimchi flavor to infuse the broth.

Adding and Cooking the Noodles: When the broth is boiling, use a spoon to scoop small portions of the dough and drop them into the pot. Dipping the spoon in water before scooping will help the dough release easily without sticking. Cook for another 5-7 minutes, or until the noodles float to the surface and are cooked through.

Adjusting the Seasoning: Once the noodles are cooked, season the broth with salt and tuna extract. Adjust the amount of salt depending on how salty your kimchi is. Adding tuna extract will significantly enhance the umami and refreshing taste. Taste and adjust the seasoning to your preference.
