Muffin Batter Ingredients- 70g unsalted butter, softened at room temperature
- 10g vanilla sugar (can substitute with granulated sugar)
- 40g brown sugar (adjust sweetness to your preference)
- 1 large egg, at room temperature (approx. 50-55g)
- 100g all-purpose flour
- 3g baking powder (approx. 1 tsp)
- 30g chocolate chips (add more or less to taste)
- 30g milk, at room temperature (approx. 2 tbsp)
Cooking Instructions
Step 1
Start by creaming the softened butter in a bowl until it’s light and fluffy. Gradually add the vanilla sugar and brown sugar, whisking well after each addition until fully incorporated. In a separate small bowl, lightly beat the room-temperature egg. Then, slowly drizzle the beaten egg into the butter-sugar mixture while continuously whisking. This gradual addition and constant whisking will help prevent the mixture from separating.

Step 2
Sift the all-purpose flour and baking powder together into a separate bowl. Add the sifted dry ingredients to the creamed butter mixture. Using a spatula, gently fold the ingredients together until just combined and no dry flour streaks remain. Be careful not to overmix, as this can lead to tough muffins. Once the dry ingredients are almost incorporated, add the room-temperature milk and chocolate chips. Gently fold these in a few more times until everything is evenly distributed throughout the batter. Give it a final gentle mix to ensure the chocolate chips are well dispersed.

Step 3
Spoon the muffin batter into prepared muffin cups, filling each about two-thirds to three-quarters full. Bake in a preheated oven at 180°C (350°F) for approximately 20-23 minutes. Baking time may vary depending on the size of your muffin tin and your oven’s specific heat. To check for doneness, insert a toothpick into the center of a muffin; if it comes out clean, they are ready. Remove from the oven once golden brown.
