Ingredients (for 1 Mini Pound Cake)
- 1 Egg (room temperature)
- 2 Medium Ripe Bananas
- 70g Sugar
- 75g Cake Flour
- 75g All-Purpose Flour
- 1/4 tsp Baking Soda
- 1/2 tsp Baking Powder
- A pinch of Salt
- 55g Vegetable Oil (e.g., Canola, Grapeseed)
- 80g Chocolate Chips
Cooking Instructions
Step 1
In a bowl, whisk together 1 egg and 55g of vegetable oil until well combined. You don’t need to overmix; just ensure the yolk and white are incorporated and the mixture is smooth.
Step 2
Add 70g of sugar and lightly mix. Then, sift in 75g of cake flour, 75g of all-purpose flour, 1/4 tsp baking soda, 1/2 tsp baking powder, and a pinch of salt. Using a spatula, gently fold the ingredients together by scraping the sides of the bowl until just combined and no dry flour streaks remain. A few small lumps are okay. Avoid overmixing, as this can result in a tough cake.
Step 3
Stir in 80g of chocolate chips into the batter. Then, add the mashed bananas. For a better texture, mash the bananas coarsely so that some chunks remain, rather than pureeing them completely.
Step 4
Gently fold the mashed bananas into the batter, ensuring they are incorporated but not completely broken down. It’s important to maintain some banana texture for the best eating experience. Again, avoid overmixing at this stage.
Step 5
Pour the batter into a preheated oven at 180°C (350°F) and bake for approximately 30 minutes. Insert a skewer or toothpick into the center; if it comes out clean, the bread is done.
