Don’t throw away leftover stale bread! By cutting it into pieces and soaking it in a sweet egg custard mixture, then baking it, you can create a wonderful bread pudding that’s crispy on the outside and wonderfully moist and soft on the inside. Main Ingredients- 2 slices of bread
- 2 eggs
- 1/2 cup (120ml) heavy cream
- 1/2 cup (120ml) milk
- 1 Tbsp sugar
- 1/4 tsp salt
- 1/4 tsp cinnamon powder
- 1 banana
- 1 Tbsp blueberry jam
- 1 tsp powdered sugar
- 2 Tbsp pecans (chopped)
- 1 sprig of rosemary (for garnish, optional)
Cooking Instructions
Step 1
First, cut the bread into bite-sized pieces. Cutting them into approximately 1-inch (2.5cm) cubes, about 16 pieces per slice, will make them look nice in the pudding and cook evenly.

Slice the banana thinly, about 7-8mm thick. If they are too thick, they may take longer to cook. (The banana in the photo doesn’t look its best! Using a fresh banana will make it even more delicious.)

In a bowl, crack the 2 eggs. Add 1/4 tsp of salt and 1 Tbsp of sugar. Whisk lightly with a whisk or fork until just combined, avoiding excessive foam.

Pour in 1/2 cup of heavy cream, 1/2 cup of milk, and 1/4 tsp of cinnamon powder into the egg mixture. Use a whisk to thoroughly combine all the ingredients until smooth and well-blended. A gentle cinnamon aroma will add a lovely depth of flavor.

Prepare an oven-safe or air fryer-safe baking dish. Place half of the cut bread slices evenly in the bottom of the dish.
