Main Ingredients

  • 2 slices of bread
  • 2 eggs
  • 1/2 cup (120ml) heavy cream
  • 1/2 cup (120ml) milk
  • 1 Tbsp sugar
  • 1/4 tsp salt
  • 1/4 tsp cinnamon powder
  • 1 banana
  • 1 Tbsp blueberry jam
  • 1 tsp powdered sugar
  • 2 Tbsp pecans (chopped)
  • 1 sprig of rosemary (for garnish, optional)

Cooking Instructions

Step 1

First, cut the bread into bite-sized pieces. Cutting them into approximately 1-inch (2.5cm) cubes, about 16 pieces per slice, will make them look nice in the pudding and cook evenly.

Step 1

Step 2

Slice the banana thinly, about 7-8mm thick. If they are too thick, they may take longer to cook. (The banana in the photo doesn’t look its best! Using a fresh banana will make it even more delicious.)

Step 2

Step 3

In a bowl, crack the 2 eggs. Add 1/4 tsp of salt and 1 Tbsp of sugar. Whisk lightly with a whisk or fork until just combined, avoiding excessive foam.

Step 3

Step 4

Pour in 1/2 cup of heavy cream, 1/2 cup of milk, and 1/4 tsp of cinnamon powder into the egg mixture. Use a whisk to thoroughly combine all the ingredients until smooth and well-blended. A gentle cinnamon aroma will add a lovely depth of flavor.

Step 4

Step 5

Prepare an oven-safe or air fryer-safe baking dish. Place half of the cut bread slices evenly in the bottom of the dish.

Step 5

Step 6

Sprinkle the sliced banana, blueberry jam, and chopped pecans sporadically over the bread. Distributing them evenly will ensure you get different flavors and textures in every bite.

Step 6

Step 7

Cover the filling with the remaining bread slices. Arrange the banana, blueberry jam, and pecans again in the same manner. Layering like this will make the pudding richer and more flavorful.

Step 7

Step 8

Pour the prepared sweet egg custard mixture evenly over the bread and fruit. Gently shake the dish or poke the bread with a chopstick to help the custard soak in thoroughly.

Step 8

Step 9

Bake in a preheated air fryer or oven at 320°F (160°C) for about 20 minutes. Adjust the temperature and time as needed to prevent the top from burning. Cooking times may vary depending on your appliance.

Step 9

Step 10

After 20 minutes, carefully remove the pudding from the oven. The top should be beautifully golden brown and look delicious! Dust with powdered sugar using a sieve for a lovely, sweet finish. You can also add a sprig of rosemary for decoration if you like.

Step 10

Step 11

See how stale bread that might have been discarded has been transformed into a stunning bread pudding! It’s wonderfully moist and soft inside with a delightful crispiness on top. The simple preparation makes it perfect for a quick dessert or a satisfying home brunch. Give it a try – you’ll love it! Enjoy your delicious creation.
