Cookie Dough Ingredients

  • 75g Bread Flour (Strong Flour)
  • 100g Cake Flour (Weak Flour)
  • 50g Fresh Carrot (finely minced)
  • 60g Brown Sugar
  • 30g White Sugar
  • 100g Unsalted Butter (softened at room temperature)
  • 1 large Egg (at room temperature)
  • 2g Baking Powder
  • 1g Baking Soda
  • 1g Salt

Cooking Instructions

Step 1

First, prepare the dry ingredients for the cookie dough. In a bowl, combine the bread flour, cake flour, baking powder, and baking soda. Sift these ingredients together 2-3 times to ensure they are finely mixed. This step will help create lighter and softer cookies.

Step 1

Step 2

Peel the fresh carrots and mince them as finely as possible. Finely minced carrots will incorporate evenly into the dough and contribute a pleasant texture to the cookies.

Step 2

Step 3

Take the unsalted butter out of the refrigerator at least 30 minutes before you begin to allow it to soften at room temperature. If the butter is still hard, you can soften it gently by placing the bowl over a double boiler (a bowl set over simmering water). Be careful not to make the water too hot, as it could melt the butter.

Step 3

Step 4

Once the butter is nicely softened, add the brown sugar, white sugar, and salt. Using a hand mixer or a whisk, cream the butter and sugars together until the mixture turns a pale ivory color and becomes light and fluffy. This ‘creaming’ process is crucial for achieving a crisp cookie texture.

Step 4

Step 5

Ensure the egg is at room temperature before adding it to the mixture, as a cold egg can cause the butter to separate. Lightly beat the egg in a separate small bowl, then gradually add it to the butter mixture, mixing slowly with the hand mixer to prevent curdling.

Step 5

Step 6

Add the sifted dry ingredients (flour, baking powder, baking soda) to the wet ingredients in three additions. Use a spatula to gently ‘cut’ and fold the ingredients together until just combined and no dry flour streaks remain. Overmixing at this stage can result in tough cookies.

Step 6

Step 7

Once the dough comes together, gently mix in the finely minced carrot and chopped white chocolate until evenly distributed. Form the dough into a cohesive ball, wrap it tightly in plastic wrap or place it in a bowl, and refrigerate for at least 30 minutes. This chilling period will firm up the dough, making it easier to shape.

Step 7

Step 8

Remove the chilled dough from the refrigerator and divide it into equal portions of 50g each. Roll each portion into a smooth ball.

Step 8

Step 9

Flatten each dough ball with your palm, creating a small indentation in the center. Place about 20g of cream cheese into the indentation. Then, carefully gather the edges of the dough around the cream cheese to enclose it completely. Gently shape the filled dough into a round, slightly flattened cookie.

Step 9

Step 10

Bake the cookies in a preheated oven at 170°C (340°F) for approximately 15 minutes. Oven temperatures can vary, so keep an eye on the cookies and adjust the baking time as needed until they are lightly golden brown on top.

Step 10

Step 11

The cookies will be very hot and fragile immediately after coming out of the oven. Do not attempt to move them right away. Let them cool on the baking sheet until they are firm enough to handle, then carefully transfer them to a wire rack to cool completely. Complete cooling is essential for achieving the perfect crispness and flavor.

Step 11

Step 12

Ta-da! Your delicious cream cheese carrot cookies are ready. Enjoy these warm and fragrant treats with your loved ones!
