Moist and Savory Milk Scones (Air Fryer Baking)
Easy Homemade Recipe: Delicious Milk Scones Made in Your Air Fryer
I enjoy baking as a hobby using my air fryer at home. I primarily make baked goods, and I wanted to share that you can achieve wonderfully delicious results with an air fryer. This recipe yields about 14 scones, though the exact number may vary depending on how you cut them. Enjoy baking! Please note that cooking times and temperatures might need slight adjustments based on your specific air fryer model.
Scone Ingredients- 50g bread flour (sifted)
- 200g cake flour (sifted)
- 8g baking powder (sifted)
- 60g cold unsalted butter (cut into small cubes)
- 40g granulated sugar
- 53g cold egg (about 1 medium egg, room temperature slightly to remove chill)
- 86g cold milk
- A few drops of vanilla extract (for flavor)
- A little milk for brushing the tops (optional)
Cooking Instructions
Step 1
First, prepare all your ingredients. Unlike many other desserts, it’s crucial for scones to use cold butter, egg, and milk. If your butter is too soft, pop it in the refrigerator to firm up before using.
Step 2
Sift the bread flour, cake flour, and baking powder together into a large mixing bowl. Sifting helps to aerate the flour and remove any lumps, leading to a lighter scone texture.
Step 3
Add the cold, cubed butter to the sifted dry ingredients. Using a pastry blender or your fingertips, quickly rub or ‘cut’ the butter into the flour until the mixture resembles coarse breadcrumbs, with some pea-sized pieces of butter remaining. Work quickly to prevent the butter from melting.
Step 4
In a separate small bowl, whisk together the cold milk, cold egg, and sugar. Mix just enough to combine and dissolve some of the sugar; no need to whisk vigorously.
Step 5
Pour the wet ingredients (milk, egg, sugar mixture) into the bowl with the flour and butter mixture. Use a spatula or wooden spoon to gently mix until just combined. Avoid overmixing.
Step 6
Now, add a few drops of vanilla extract to the dough. This little addition will enhance the overall flavor profile of your scones.
Step 7
It’s important to mix the dough gently and quickly to prevent the butter from melting from the warmth of your hands. Mix only until the dry flour streaks have just disappeared.
Step 8
The dough should come together into a cohesive mass. If you overmix, the gluten will develop, resulting in tough scones. Stop mixing as soon as it forms a dough.
Step 9
Gather the dough into a ball, wrap it tightly in plastic wrap, and refrigerate for 30 minutes to 1 hour. This chilling period allows the butter to firm up again and the gluten to relax, which is key for a good scone texture.
Step 10
Once chilled, lightly dust your work surface and the dough with flour. Roll out the dough with a rolling pin to an even thickness of about 2 cm (about 3/4 inch). Aim for a thickness that’s not too thin.
Step 11
Cut the dough into your desired shapes – squares or triangles work well. Then, gently brush the tops of the scones with a little milk. This will help them achieve a beautiful golden-brown color as they bake.
Step 12
Place the prepared scones into your air fryer basket, ensuring they have some space between them. Air fry at 170°C (338°F) for about 15 minutes. They will puff up as they bake.
Step 13
You’ll notice the scones puff up nicely during cooking. Giving them adequate space is essential for even baking and a beautiful shape.
Step 14
Voila! Your delicious, golden-brown scones are ready. They look and smell amazing!
Step 15
These scones are wonderfully savory on their own, but they are also perfect served with strawberry jam or clotted cream. They make a delightful accompaniment to a cup of coffee or a glass of cold milk for a perfect snack or afternoon tea. Enjoy! ^^
