  • 8g baking powder (sifted)
  • 60g cold unsalted butter (cut into small cubes)
  • 40g granulated sugar
  • 53g cold egg (about 1 medium egg, room temperature slightly to remove chill)
  • 86g cold milk
  • A few drops of vanilla extract (for flavor)
  • A little milk for brushing the tops (optional)

First, prepare all your ingredients. Unlike many other desserts, it’s crucial for scones to use cold butter, egg, and milk. If your butter is too soft, pop it in the refrigerator to firm up before using.
