Golden Recipe for Moist Stir-Fried Anchovies: Make Them Without Burning
Today, we’ll show you how to make stir-fried anchovies that are moist and not burnt. It’s simple and easy to follow.
Main Ingredients- 80g anchovies (small or stir-fry anchovies)
- A little cooking oil
- 0.5 tsp minced garlic

Step 1
First, prepare 80g of anchovies (small or stir-fry anchovies work well). Heat a pan over low heat, and add the anchovies without any oil. Toast them until they become fragrant. This step removes any fishy smell and enhances their nutty flavor. Stir gently to prevent them from breaking.
Step 2
Once the anchovies are lightly toasted and fragrant, transfer them to a clean bowl and let them cool slightly. This helps prevent them from becoming too crispy, allowing the sauce to coat them better later.
Step 3
In a separate pan, add a little cooking oil and sauté 0.5 tsp of minced garlic over low heat. Cook just until the garlic becomes fragrant. Avoid overcooking, as it can turn bitter. The goal is to release the garlic’s aroma without burning it.
Step 4
Now, let’s make the sauce. Add 1 Tbsp of soy sauce and 0.5 Tbsp of oligosaccharide (or corn syrup) to the pan with the garlic. Keep the heat on low, and as soon as the sauce starts to bubble, turn off the heat immediately. If the sauce reduces too much, the anchovies might become hard.
Step 5
With the heat off, add the toasted and cooled anchovies back into the pan. Gently toss them with the sauce until they are evenly coated. Finally, sprinkle with sesame seeds for garnish. You can also use toasted sesame seeds if you prefer. Store the finished stir-fried anchovies in an airtight container.
