Dough Ingredients

  • 300g Bread flour
  • 5g Salt
  • 12g Instant dry yeast
  • 42g Egg (room temperature)
  • 145g Milk (room temperature)
  • 25g Sweetened condensed milk
  • 45g Unsalted butter (room temperature, softened)

Blueberry Cream Cheese Filling Ingredients

  • 100g Cream cheese (room temperature, softened)
  • 50g Heavy cream (cold)
  • 30g Sugar
  • 15g Blueberry jam

Cooking Instructions

In a large bowl, combine the bread flour, sugar, and salt. Make a well in the center and add the instant dry yeast. (Be careful not to let the yeast directly touch the salt!) Next to it, add the egg, milk, and sweetened condensed milk. Mix with a spatula or your hands until roughly combined and no dry flour is visible.

Once the dry ingredients are somewhat incorporated, add the softened room-temperature butter. Begin kneading the dough. Repeatedly push and fold the dough with the palm of your hand until it becomes smooth and elastic. (This should take about 10-15 minutes.)

Shape the smooth dough into a ball, place it in a bowl, cover with plastic wrap, and let it undergo its first proof in a warm place. Allow it to rise until it has doubled in size, which usually takes about 1 hour.

After the first proof, gently punch down the dough on a lightly floured surface to release the gas. Divide the dough into equal portions of 25g each. (This will yield about 12-14 buns.)

Shape each portion of dough into a smooth ball. Place them seam-side down onto a baking sheet, leaving some space between them. Cover with plastic wrap or a damp kitchen towel and let them undergo their second proof in a warm place for about 30-40 minutes, until puffy.

Once the second proof is complete, the buns should look nicely puffed up. Gently brush the tops of the buns with an egg wash to give them a lovely sheen. (Be careful not to press down too hard!)

Bake in a preheated oven at 180°C (350°F) for 8 to 10 minutes, until golden brown. They are ready when the tops are a beautiful golden color.

While the buns are baking, let’s make the filling! In a bowl, gently whip the room-temperature cream cheese until smooth. Add the cold heavy cream and sugar, and whip with a hand mixer or whisk until it becomes light, fluffy, and holds stiff peaks, like whipped cream.

Gradually add the cold heavy cream to the whipped cream cheese in 2-3 additions, mixing gently until combined. Be careful not to overmix, as it can cause the cream to separate. (Repeat this process about twice to achieve a smooth and stable cream.)

Add the blueberry jam to the finished creamy cream cheese filling and gently fold it in. Mix gently until the jam is incorporated without lumps, creating a delicious blueberry cream cheese filling.

Once the baked mini morning buns have cooled slightly, generously pipe or spoon the prepared blueberry cream cheese filling onto the top of each bun. The combination of the rich, creamy filling and the soft, fluffy bun is absolutely divine. Enjoy your delicious homemade morning buns!
