Cooking Instructions
Step 1
Begin by thoroughly washing the fresh minari under running water to remove any dirt or grit. Trim off any tough stems or roots. Cut the clean minari into bite-sized pieces, approximately 3-4 cm long. This ensures it’s easy to eat and incorporates well with the dressing.
Step 2
In a medium-sized mixing bowl, prepare the dressing. Combine the anchovy sauce (2 Tbsp), vinegar (1 Tbsp), and sugar (2 Tbsp). Add the creamy mayonnaise (4 Tbsp) and the bright, zesty lime juice (1 Tbsp). Finally, stir in the nutty ground perilla seeds (1 Tbsp) for added depth. Whisk all the ingredients together until the dressing is smooth and well combined. Taste and adjust seasoning if needed.
Step 3
Add the cut minari to the bowl with the prepared dressing. Gently toss the minari with the dressing until all the leaves are evenly coated.
