Mild Tuna Kimchi Stew (Kid-Friendly)
Tuna Kimchi Stew Perfect for Kids’ Daily Meals
We’ve made a Tuna Kimchi Stew using aged kimchi (muk-kimchi). Instead of a spicy version, this is a clear and mild soup designed for children, and it’s a huge hit! Even preschoolers can enjoy it without any spiciness.
Ingredients- 1 whole aged kimchi (muk-kimchi)
- 3 cans (750g each) tuna, oil reserved separately
- 1 block of tofu
- 1 stalk of green onion
- 1 Tbsp minced garlic
- 2 Tbsp tuna extract (or soy sauce for soup)
- A pinch of salt (to taste)
- 1/2 Tbsp sugar
Cooking Instructions
Step 1
First, prepare the 3 cans of tuna. Don’t discard the oil from the tuna cans; collect it separately in a small bowl. This oil can be used later when stir-frying the kimchi to add a deeper flavor.
Step 2
Rinse the kimchi well and then chop it into bite-sized pieces. Using aged kimchi (muk-kimchi) will result in a richer and more refreshing taste.
Step 3
Tofu adds a lovely tenderness to the kimchi stew. Cut the prepared tofu into manageable cubes (about 2-3 cm) so they hold their shape during cooking.
Step 4
Now, let’s stir-fry! Heat a pot and add the reserved tuna oil. Add the chopped kimchi and stir-fry over medium heat until it becomes tender and fragrant. Stir-frying in tuna oil helps bring out the kimchi’s savory notes.
Step 5
Once the kimchi is well stir-fried and softened (for about 10 minutes), pour in 5 liters of water and bring it to a rolling boil over high heat. If your aged kimchi is particularly sour, you can add a little more sugar at this stage.
Step 6
As soon as the water starts boiling, add the tuna and reduce the heat to medium. Let it simmer gently. Stir carefully to avoid breaking up the tuna, allowing its flavor to infuse the broth. Simmering for a good amount of time is key here.
Step 7
Once the tuna is partially cooked, add the cubed tofu. Stir in 2 tablespoons of tuna extract (or soy sauce for soup), 1/2 tablespoon of sugar, the chopped green onion, and 1 tablespoon of minced garlic. Let it simmer further to allow all the flavors to meld together. Finally, taste the stew and adjust the seasoning with a pinch of salt if needed. Your delicious and mild Tuna Kimchi Stew is ready!
