- 1 Tbsp Coarse Salt (for blanching)
- 1 Tbsp Salt (for seasoning)
- 1 Tbsp Sesame Oil
- 1 Tbsp Toasted Sesame Seeds

Step 1
First, prepare the fresh baby bok choy. Trim the base of the bok choy and wash it thoroughly under running water to remove any dirt or debris trapped between the leaves. Gently wash to keep the leaves intact.

Bring a pot of water to a rolling boil. Using plenty of water for blanching helps maintain the bok choy’s crisp texture.

Once the water is boiling, add 1 Tbsp of coarse salt, then carefully submerge the washed baby bok choy. Blanch for about 1 minute. Blanching for too long will make it mushy, so a short blanch is key. Remove as soon as the bok choy turns a vibrant green.
