Mild Kimchi Fried Rice for Kids

This recipe is specially designed for children who can’t handle spicy food. We’ve minimized the spiciness while preserving the delicious flavor of kimchi, creating a kimchi fried rice that kids can enjoy. Make a hearty and tasty meal easily!
Main Ingredients
- 1 bowl of cooked rice (approx. 250g)
- 80g finely chopped kimchi (approx. 4 Tbsp)
- 30g finely minced carrot (approx. 2 Tbsp)
- 30g finely minced zucchini (approx. 2 Tbsp)
- 80g chopped sausage (approx. 8 small Vienna sausages)
- 1 egg
Seasoning & Others
- 1 Tbsp scallion oil (or 1 Tbsp cooking oil + 1 Tbsp minced scallion)
- 1/3 tsp soybean paste (doenjang)
- 0.5 Tbsp cooking wine (mirin)
- 0.5 Tbsp sesame oil
- 1 Tbsp scallion oil (or 1 Tbsp cooking oil + 1 Tbsp minced scallion)
- 1/3 tsp soybean paste (doenjang)
- 0.5 Tbsp cooking wine (mirin)
- 0.5 Tbsp sesame oil
Cooking Instructions
Step 1
First, prepare the vegetables. Wash and finely mince the zucchini and carrot. Also, finely chop the sausage into bite-sized pieces. (30g each of carrot and zucchini is about 2 Tbsp, and 80g of small Vienna sausages is about 8 pieces.)
Step 2
Do not wash the kimchi with water. Instead, shake off as much kimchi juice as possible and then finely chop it. In a bowl, combine the 80g of chopped kimchi (approx. 4 Tbsp) with 1/3 tsp soybean paste, 0.5 Tbsp cooking wine, and 0.5 Tbsp sesame oil. Mix well by gently kneading. The soybean paste helps to neutralize the spiciness of the kimchi and adds a savory depth.
Step 3
Heat 1 Tbsp of scallion oil in a pan over medium heat. Add the chopped sausage and stir-fry for about 1 minute. If you don’t have store-bought scallion oil, you can make your own by heating 1 Tbsp of cooking oil with 1 Tbsp of minced scallion over low heat until the scallions turn golden brown. Alternatively, you can just use 1 Tbsp of cooking oil.
Step 4
Add the seasoned kimchi to the pan and stir-fry over high heat for about 30 seconds. This quickly cooks the kimchi, bringing out its tangy and savory flavors.
Step 5
Add the minced carrot and zucchini. Continue to stir-fry over high heat for about 10 seconds, just until the vegetables are slightly tender. Be careful not to overcook them, as they can become mushy.
Step 6
Push the cooked ingredients to one side of the pan. Crack the egg into the empty space. Quickly scramble the egg until just cooked. Then, mix everything together thoroughly. The scrambled egg helps to mellow out any remaining spiciness, making it more palatable for children.
Step 7
Add the cooked rice (1 bowl) to the pan. Reduce the heat to medium. Use your spatula to gently break up any clumps of rice and stir everything together evenly, ensuring the rice grains are well coated with the delicious seasonings. Make sure each grain of rice is infused with flavor.
Step 8
Your mild kimchi fried rice, perfect for kids, is now ready! If your child finds it a little spicy, you can stir in about half a tablespoon of mayonnaise for an even milder and creamier taste. Watching the recipe video will also be very helpful!
