Making a Mild and Delicious Silken Tofu Stew Perfect for Children
This silken tofu stew is made without any harsh seasonings, making it a gentle dish that even children will enjoy. Its mild and savory flavor makes it a perfect, comforting meal for the whole family, especially for little ones who might be sensitive to spicy foods. It’s also great as a hangover cure or simply to soothe your stomach.
Main Ingredients- 1/2 block silken tofu
- 1 egg
- 1/2 zucchini
- A small bunch of oyster mushrooms
- A small bunch of green onions
- 1 kelp pack
- 6 cups water (approx. 1.2L)

- 0.5 Tbsp soup soy sauce

Cooking Instructions
Step 1
First, let’s prepare the broth for a delicious tofu stew. In a pot, pour 6 cups of water (about 1.2L) and add the kelp pack. Simmer for about 10 minutes to extract a rich kelp broth. Remove the kelp pack and set the broth aside.
Step 2
Wash the zucchini thoroughly and slice it into half-moon shapes, about 0.5cm thick. Trim the ends of the oyster mushrooms and tear them into bite-sized pieces by hand, or simply wash them. Finely chop the green onions to add a fresh aroma later.
Step 3
Crack the egg into a small bowl, remove the chalazae (the white strings), and whisk it gently. Prepare half a block of silken tofu by breaking it into large chunks with a spoon; this preserves its soft texture. Be careful not to break it into very small pieces.
Step 4
Add the prepared zucchini and oyster mushrooms to the simmering kelp broth. Cook until the vegetables are slightly tender. The natural sweetness of the vegetables will infuse into the broth, creating a deeper flavor.
Step 5
Once the zucchini and mushrooms are somewhat cooked, gently add the silken tofu. Use a spoon to carefully push the tofu chunks into the broth, maintaining their large size. Let it simmer until it begins to bubble, then reduce the heat slightly.
Step 6
When the silken tofu starts to gently boil, slowly drizzle the beaten egg in a circular motion around the edges of the pot. Avoid stirring immediately; let the egg cook into delicate ribbons or ‘flower’ shapes for a beautiful presentation.
Step 7
Once the egg is cooked and set, add the chopped green onions. Finally, season the stew. Add 0.5 Tbsp salt and 0.5 Tbsp soup soy sauce to balance the flavors. Taste and adjust with more salt or soup soy sauce if needed to suit your preference.
