Main Ingredients

  • 300g Sausage (choose your preferred type)
  • 1/2 Onion (medium-sized)
  • 1 handful Cabbage (about the size of your palm)
  • A little Carrot (for color)
  • 5 Perilla Leaves (깻잎)
  • 3 cloves Garlic (minced or thinly sliced)
  • 1 Red Chili
  • 1 Green Chili
  • 1 stalk Green Onion
  • 100ml Water (approx. 1/2 cup)

Seasoning & Stir-fry

  • 1 Tbsp Perilla Seed Powder (들깨가루)
  • 1-2 Pinches Salt (to taste)
  • A pinch of Black Pepper
  • 3 Tbsp Perilla Oil (들기름) in total

Dipping Sauce

  • 3 Tbsp Gochujang-based Vinegar Sauce (초고추장)
  • 1/2 Tbsp Minced Garlic
  • 1 Tbsp Perilla Seed Powder (들깨가루)
  • 1 Tbsp Perilla Oil (들기름)

Cooking Instructions

Step 1

First, prepare your vegetables. Slice the red and green chilies finely after removing the seeds. Thinly slice the carrot and then cut it in half. Mince the garlic or slice it thinly. Cut the half onion into two pieces, then into bite-sized portions (about 2-3 cm).

Cut the cabbage into bite-sized pieces (about 3-4 cm) – not too small, to maintain crispness. Soak the prepared cabbage in water with 1 tablespoon of vinegar for 5 minutes; this helps keep it crunchy and removes impurities. After 5 minutes, rinse thoroughly under cold water and drain completely.

Wash the perilla leaves clean, remove the stems, then roll them up and thinly slice them (about 0.5 cm thick). Slice the green onion diagonally.

Slice the sausage into thick pieces, about 1-1.5 cm thick, not too thin. This prevents them from breaking apart during stir-frying and improves texture.

Let’s make the special dipping sauce! In a bowl, combine 3 tablespoons of Gochujang-based Vinegar Sauce, 1/2 tablespoon of minced garlic, 1 tablespoon of perilla seed powder, and 1 tablespoon of perilla oil. Mix well. You can add a little sugar or corn syrup to your liking.

Now, let’s stir-fry! Heat a pan over medium-low heat and add 2 tablespoons of perilla oil. Sauté the sliced garlic and chopped green onion until fragrant. Once the aroma of garlic and green onion rises, add the prepared carrots, onions, and cabbage. Stir-fry until the vegetables are slightly softened. Cooking over medium-low heat prevents burning and ensures delicious results.

When the vegetables are slightly wilted, add the sliced sausage. Pour in 100ml of water. Add 1 tablespoon of perilla seed powder, 1-2 pinches of salt, and a pinch of black pepper. Stir everything together gently. Cover the pan and steam over medium heat for about 2 minutes. This will make the sausage plump and moist.

After 2 minutes, open the lid. Once the sausage is cooked, add the remaining 1 tablespoon of perilla oil. Toss in the sliced red and green chilies and the shredded perilla leaves. Stir-fry quickly over high heat to maintain the crispness and aroma of the vegetables. This step is key!
