Ingredients

  • 1.3L Water
  • 3 Tbsp Miso paste (adjust to taste)
  • 1 packet Enoki mushrooms (approx. 50-70g)
  • 100g Bok choy
  • 270g Silken tofu (about 1/2 block)

Cooking Instructions

Step 1

First, prepare the vegetables and tofu that will add a refreshing flavor to the soup. Carefully separate the leaves of the fresh bok choy and wash them thoroughly under running water. Ensure you wash them meticulously, as soil can sometimes cling to the leaves.

Trim the base of the enoki mushrooms, which will add a pleasant crunch, and cut them into roughly 2cm segments. Dice the soft tofu into bite-sized pieces, slightly smaller than usual, about 1.5cm cubes. If serving to babies, you can cut them even smaller.

Now, let’s create the soup base. Pour 1.3L of fresh water into a pot. Add 3 generous tablespoons of miso paste. Start by heating it over high heat. It’s important to dissolve the miso paste well without any clumps. Since miso paste can vary in saltiness by brand, we recommend adjusting the amount to suit your personal preference.

Once the soup begins to boil vigorously, carefully add the diced tofu. Gently place the tofu into the pot to prevent it from breaking apart.

As the tofu starts to cook, add the washed bok choy. Bok choy cooks very quickly, so be mindful not to overcook it. Reduce the heat to medium and simmer for about 3 minutes to maintain the bok choy’s crisp texture.

Finally, add all the prepared enoki mushrooms. Simmer for an additional minute or so. Enoki mushrooms also cook quickly, so overcooking can make them mushy. Cook just long enough for all the ingredients to meld together, and your delicious miso soup will be ready!
