Let’s make Tteokbokki that even those sensitive to spice can enjoy! This recipe reduces the spiciness of gochujang while enhancing sweetness and umami, making it a mild yet flavorful dish.

Tteokbokki Ingredients

  • 300g rice tteokbokki rice cakes
  • 80g fish cakes (eomuk)
  • 1/2 stalk green onion

Mild Seasoning Sauce

  • 300ml water
  • 1 Tbsp gochujang (choose a milder variety)
  • 1/2 Tbsp soy sauce
  • 1/2 Tbsp minced garlic
  • 1 Tbsp plum syrup (for sweetness and depth)

Cooking Instructions

For the chewy rice tteokbokki cakes, briefly blanch them in boiling water. This softens them and removes excess starch, resulting in a better texture. Rinse them under cold water, drain, and place them in the pan. This also helps prevent the rice cakes from sticking together.

Cut the fish cakes into bite-sized pieces. Blanching them in boiling water helps remove their excess oil, leading to a cleaner taste. Add them to the pan along with the prepared rice cakes.

Add the rice cakes and fish cakes to the pan. Pour in the 300ml of water and all the ingredients for the mild seasoning sauce (gochujang, soy sauce, minced garlic, plum syrup). Bring to a boil over high heat, stirring to ensure the sauce is well combined.

Once the rice cakes start to float and expand, reduce the heat to medium. Continue to simmer for about 5 more minutes, allowing the rice cakes to absorb the flavors of the sauce. This simmering step deepens the overall taste of the Tteokbokki.

Finally, add the sliced green onions and simmer for another short while. The fresh aroma of the green onions will further enhance the flavor of the Tteokbokki. Be careful not to overcook the green onions, as they can become too soft.
