Mild and Clear Tofu Stew for Babies
Baby-Friendly Side Dish: Clear Tofu Stew Recipe
Hello! Every day, I ponder what new side dishes to prepare for my little one. Inspired by a tofu dish featured on an EBS cooking show, I decided to make a mild and clear tofu stew specifically for babies. This recipe uses fresh ingredients for a natural, delicious flavor without artificial seasonings, making it perfect as a first soup for your baby.
Ingredients- 100g Silken Tofu (baby-specific soft tofu)
- 4 Shrimp (peeled and deveined)
- 1 Egg (we’ll only use the yolk)
- 1/2 Small Onion (finely minced)
- 1/3 Mushroom (Shiitake or King Oyster, finely minced)
- 2 thumb-sized pieces of Scallion (finely minced)
- 200ml Anchovy-Kelp Broth (or rice water)
- 1 tsp Sesame Oil
Cooking Instructions
Step 1
First, prepare a clear broth by simmering anchovies and kelp. (Alternatively, rice water can be used!)
Step 2
While the broth is simmering, finely mince the onion and mushrooms. Finely mincing vegetables like this adds natural sweetness and depth of flavor, eliminating the need for artificial seasonings and making the stew tastier and healthier.
Step 3
After peeling and deveining the shrimp, mince them very finely so they are easy for your baby to chew and eat. The tender shrimp will enhance the broth’s savory taste.
Step 4
Once the anchovy broth starts boiling, add the minced vegetables and shrimp. Let it simmer for a short while to allow the flavors to meld. Cook over medium-low heat until gently simmering.
Step 5
When the vegetables and shrimp are sufficiently cooked, gently scoop large pieces of silken tofu into the stew. Silken tofu is very delicate, so be careful not to break it up too much as you add it.
Step 6
Once the tofu begins to simmer, lightly beat the egg yolk and gently pour it in a circular motion over the stew. The cooked yolk will add a soft, rich flavor. Separate the egg white and use it for another dish!
Step 7
Finally, add the finely minced scallions, turn off the heat, and drizzle with a drop of sesame oil. Your mild tofu stew for babies is ready! Make sure to let it cool to a safe temperature before serving this delicious stew to your little one.
