A Delicious One-Dish Meal Made Simply in the Microwave

Microwave Spicy Soft Tofu (Yangnyeom Sundubu)

This is an incredibly simple dish you can make using just your microwave. Although it’s easy to prepare, it tastes like a gourmet meal.

Main Ingredients

  • 1 package of soft tofu (Sundubu, approx. 300-400g)
  • A pinch of sesame seeds (for garnish)

Seasoning Ingredients

  • 2 Tbsp chopped green onion (approx. 20g)
  • 1 chopped Cheongyang pepper (Korean chili pepper, approx. 10g)
  • 1 Tbsp gochugaru (Korean chili flakes, approx. 10g)
  • 2 Tbsp soy sauce (approx. 30g)
  • 1 Tbsp cooking wine (mirin or similar, approx. 15g)
  • 1/2 Tbsp oligodang (corn syrup) or rice syrup (approx. 7g)
  • 1 Tbsp sesame oil (approx. 15ml)
  • 1/2 Tbsp minced garlic (approx. 5g)

Cooking Instructions

Step 1

Carefully open the packaging of the soft tofu and cut it in half. Place it on a sieve for about 5 minutes to allow excess water to drain naturally. This step helps the tofu absorb the sauce better and improves its texture.

Wash and finely chop the green onion and Cheongyang pepper for the seasoning. You can remove the seeds from the Cheongyang pepper if you prefer less heat.

In a mixing bowl, combine the chopped green onion and Cheongyang pepper. Add the gochugaru, soy sauce, cooking wine, oligodang, sesame oil, and minced garlic. Mix all the seasoning ingredients thoroughly until well combined.

Place the drained soft tofu onto a microwave-safe dish or plate. Microwave for about 1 minute to gently warm it and release some of its moisture. This preliminary heating helps the tofu absorb the flavors more effectively.

Cut the warmed soft tofu into bite-sized pieces. Avoid cutting them too small, as they can easily break apart. Typically, cutting into 2-3 pieces is recommended.

Spoon the prepared seasoning mixture evenly over the cut soft tofu. Ensure the sauce covers the surface of the tofu well.

Return the dish to the microwave and cook for another 1 to 1.5 minutes, or until the tofu is heated through and the sauce has slightly thickened. Cooking times may vary depending on your microwave’s wattage.

Carefully remove the cooked spicy soft tofu from the microwave. Sprinkle a pinch of sesame seeds over the top for added aroma and flavor. Serve immediately while warm for the best taste experience.
