Basic Ingredients

  • 3 large eggs
  • 200ml dashi broth (or water)
  • 2/3 Tbsp cooking wine (like mirin)
  • 1/4 tsp salt

Optional Add-ins

  • Cooked shrimp
  • Ginkgo nuts
  • Shiitake mushrooms (sliced)
  • Scallions (chopped, to taste)

Cooking Instructions

First, crack the 3 eggs into a bowl. Add 200ml of dashi broth (or water), 2/3 Tbsp of cooking wine, and 1/4 tsp of salt. We highly recommend using dashi broth for a super smooth texture and a subtle umami flavor! The cooking wine is key to removing any eggy smell, making your steamed egg much more delicious. (If you don’t have dashi broth, water is an acceptable substitute. If you lack cooking wine, mirin or even clear rice wine can work, but since they might be less sweet, consider adding a tiny pinch of sugar.)

Using chopsticks, gently whisk the ingredients together until well combined. Try not to whisk too vigorously to avoid creating too much foam.

For an even silkier texture, strain the egg mixture through a fine-mesh sieve. Discard the stringy chalazae that gets caught in the sieve.

Prepare a microwave-safe bowl. Using a smaller diameter bowl helps the egg cook faster. To ensure the steamed egg releases easily after cooking, you can lightly grease the inside of the bowl with sesame oil. (This step is optional.)

Pour the strained egg mixture into the prepared bowl(s), dividing it if using multiple small bowls. This helps ensure even cooking.

Cover the bowl(s) tightly with plastic wrap, and then poke several holes in the wrap with a toothpick. These holes allow steam to escape, preventing pressure buildup and ensuring the egg cooks evenly.

Now, microwave the bowl for 3 to 5 minutes. Microwave wattages vary, so cooking times can differ. It’s best to start with 3 minutes and check for doneness.

After 3 minutes, insert a toothpick into the center of the steamed egg. If it comes out clean, it’s done. If there’s still liquid egg, microwave in additional 30-second to 1-minute intervals until fully cooked. You’re looking for a texture that’s jiggly and set, like pudding.

Once your steamed egg is perfectly cooked, garnish it with toppings like cooked shrimp, ginkgo nuts, sliced shiitake mushrooms, or chopped scallions for a beautiful and delicious presentation. While delicious on its own, these additions make it even more special. Enjoy your meal!
