  • 3 Tbsp All-purpose Flour

Seasoning Sauce
  • 8 Tbsp Soy Sauce
  • 1/2 Tbsp Fish Sauce (Anchovy or Pollock, or use Korean soup soy sauce)
  • 3 Tbsp Gochugaru (Korean Chili Flakes)
  • 1 tsp Sugar
  • 1 Tbsp Maesilcheong (Plum Extract)
  • 1 Tbsp Minced Garlic
  • Generous amount of Toasted Sesame Seeds
  • 1 Tbsp Sesame Oil
  • A little finely chopped Scallion (optional)

Cooking Instructions

Step 1

First, thoroughly wash the Korean green peppers under running water. While removing the stems, check for and discard any bruised or damaged parts.

Step 2

Do not completely dry the washed peppers. Place them in a resealable plastic bag or a similar food-safe bag while they are still slightly damp. Then, sprinkle 3 tablespoons of flour over the peppers. The residual moisture will help the flour cling evenly.

Step 3

Gently inflate the bag with air to make it balloon-like. Seal the opening tightly and shake the bag vigorously. This ensures that each pepper is lightly and evenly coated with flour, without clumps. Transfer the floured peppers to a microwave-safe dish and microwave for 5 minutes. (Adjust cooking time based on your microwave’s wattage).

Step 4

While the peppers are microwaving, let’s prepare the delicious seasoning sauce. In a bowl, combine 8 tablespoons of soy sauce, 1/2 tablespoon of fish sauce, 3 tablespoons of gochugaru, 1 teaspoon of sugar, 1 tablespoon of maesilcheong, and 1 tablespoon of minced garlic. Mix well. Add a generous amount of toasted sesame seeds and 1 tablespoon of sesame oil for aroma. Finely chopped scallions can be added for extra flavor and color, if desired.

Step 5

After microwaving for 5 minutes, take out the Korean green peppers. They should be tender and moist, with a light coating of flour. Be careful as they will be hot.

Step 6

Add the steamed peppers to the prepared seasoning sauce. Gently toss them to ensure the sauce coats every piece evenly. Be careful not to mash the peppers while mixing.

Step 7

Your delicious Ggwari Gochu Jjim is ready! It looks appetizing with its vibrant color.

Step 8

It’s amazing how such a wonderful side dish can be made in just 10 minutes! By steaming the peppers in the microwave, we significantly reduce cooking time while maintaining the flavor, making it a truly satisfying dish. It’s perfect as a side for rice or even as a snack with drinks!
