Ingredients

  • 10 sheets Rice paper
  • 1 Tbsp Peanut sauce (adjust to taste)
  • 1 Tbsp Chili sauce (adjust to taste)
  • 3 Chicken breasts
  • 1/4 to 2/3 head Cabbage (adjust size accordingly)

Cooking Instructions

Step 1

First, place the cabbage in a microwave-safe, deep container. Add just a small amount of water (about 1-2 tablespoons). Loosely cover with a lid or plastic wrap with a few holes poked in it, and microwave for about 4 minutes. (Cooking time may vary depending on your microwave’s wattage, so check the cabbage’s tenderness and adjust as needed.)

After the initial cooking, check the cabbage. If it’s not tender enough or you prefer it softer, add a little more water and microwave for another 4 minutes. I used a Glasslock RengiCook container, and since the cabbage filled quite a bit, I cooked it twice for the perfect tender texture.

Carefully remove the hot cabbage from the microwave and let it cool slightly. Then, thinly shred the cabbage. This process reduces its crispness and makes it much softer, ideal for wrapping.

Prepare a bowl of warm water. Briefly dip each sheet of rice paper into the warm water until it becomes pliable, then lay it flat on a plate. Place a suitable amount of the shredded cabbage onto the softened rice paper.

Next, add your chicken breast. If using raw chicken breast, you can cook it in the microwave beforehand. I used pre-seasoned chicken breast that just needed heating. Place your desired amount of chicken breast on top of the cabbage.

Fold the sides of the rice paper inwards and then roll it up tightly to form the roll. For added crunch, you can include thinly sliced onions or bell peppers, but using just the chicken and cabbage makes for a delicious roll too!

Finally, dip your completed cabbage and chicken breast rolls into the peanut sauce or chili sauce and enjoy! It’s a simple yet satisfying meal. Enjoy! ♥
