Super Simple 5-Minute Microwave Bean Sprout Cold Soup Recipe
It’s too hot to cook in the summer. Here’s a super simple bean sprout cold soup recipe made in the microwave. This is a very easy dish you can enjoy in just 5 minutes.
Ingredients- 100g bean sprouts
- 100ml water
- 1 cube of broth concentrate
- 1 Tbsp tuna extract (or fish sauce)
- 1 tsp minced garlic
- 300g ice cubes
- 10g green onion (scallion)
- 0.5 red chili pepper
Cooking Instructions
Step 1
Place 1 teaspoon of minced garlic into a microwave-safe bowl.
Step 2
Add 1 tablespoon of tuna extract (or fish sauce) and 100ml of hot water. Mix well. If you are using lukewarm water, it’s recommended to crush the broth cube into finer pieces in the next step.
Step 3
Crush the broth concentrate cube. If it’s hard, you can use the back of a knife or a heavy tool to crush it. Alternatively, place it in a small plastic bag and roll over it with a rolling pin.
Step 4
Combine all the ingredients prepared so far and mix well to create the soup base.
Step 5
Add 100g of thoroughly washed bean sprouts. Cover the bowl with a lid or plastic wrap, then microwave for 4 minutes. (Cooking time may vary depending on your microwave’s power.)
Step 6
Prepare about 300g of ice cubes. Filling a 550ml tumbler usually holds around 300g of ice. The volume and weight might differ depending on the ice shape, so this is just a guideline. Use a generous amount for a refreshingly cold soup.
Step 7
After microwaving the bean sprouts for 4 minutes, take out one sprout and taste to check if it’s cooked. If it’s not cooked enough, microwave for another 30 seconds to 1 minute. Be careful not to overcook the bean sprouts, as they can become mushy.
Step 8
While the soup is still warm, add thinly sliced green onion (scallion). The hot soup will draw out the fresh aroma of the green onion.
Step 9
Add the prepared ice cubes generously to the soup.
Step 10
The ice will melt quickly in the hot soup, chilling it down rapidly. You’ll notice the soup becoming cold within just a few seconds.
Step 11
Finally, garnish with a few slices of red chili pepper. Your refreshing and visually appealing bean sprout cold soup is ready! Enjoy it immediately.
