First, prepare 4 cups of rice. Rinse the rice gently two to three times under running water to remove any impurities until the water runs clear. After rinsing, drain the rice in a colander and let it soak for about 30 minutes. Soaking the rice will make it chewier and tastier. Once soaked, place the rice in your rice cooker and add water according to your usual rice-cooking ratio.
Step 3
Carefully make 2-3 small slits on the Mentaiko using a knife. Be gentle to avoid bursting the skin. This allows the flavorful roe to infuse into the rice as it cooks, while also keeping the Mentaiko in a nice shape.

Now, start the cooking process in the rice cooker. Once the rice begins to boil (before the cooking cycle finishes, or during pressure cooking), let it cook for about 15 minutes. Then, reduce the heat to low and cook for another 10 minutes. When the rice is almost done, gently place the scored Mentaiko on top of the rice. Arrange it nicely so it sits appealingly on the rice grains.
